Lemon Fridge Dessert

I can follow a recipe like a champ, but am so non-creative when it comes to mixing things on the fly. This recipe (read that mixture) turned out great, in fact I made two today for DH and DD's birthdays. I use the Dixie Diner graham cracker-like crust from Netrition with a couple additions, but you can skip it and just use it as a pudding/mousse dessert instead.

Lemon Fridge Pie
8 ounces softened cream cheese (6.4 grams)
1 small box sf lemon jello (zero)
1 small box sf instant lemon pudding mix (24 grams)
1 cup cream (7 grams)
1 cup water (zero)
true lemon to taste (zero)
1 pouch DD crust mix

I am not a fan of cream cheese chunks, so I add part of the water to the cheese first, mix, add, mix, than add the cream and the other ingredients. Beat till fluffy.

Total: 37.4 8 servings 8 servings at 4.65 per serving
If using Dixie Diner crust: 5.75 per serving

The crust is good using the package directions, I like it better with an extra T of butter, and 2 T Erythritol. I mix then bake for 15 minutes and cool before adding the pudding mixture.

I made this using sf cheesecake pudding, and raspberry jello, then folded in fresh berries. Very good, but it seemed a lot stiffer. Of course that was probably the cook.

I do. DH not so much, but he never eats crust anyway (he is not normal either). It is a little pricey, but for occasions when I need to make a dessert for others (non-lc) it fits the bill, and tastes pretty close to the real deal. As I put in my post, I do sweeten it up a bit, and add extra butter, but it is good as the package instructs. It is 9 grams of carbs per pouch, which makes one 9" pie. They suggest using it as a crumble topping, I plan on trying that as well.

So, do I just add the dry jello and pudding mix to the cream cheese mixture? And then just put it in the refrigerator?

Mix the cream cheese with water to avoid lumps, mix in the cream, and then dump in the jello and the pudding mix. Beat (or mix, whatever the term is using a mixer...) till fluffy then chill. It will set up more in the fridge. It could have more liquid too if you wanted it more soft, maybe a tad more water or cream, or even DaVinci for additional flavor. It is excellent, and I plan on finding a sub for the pudding mix to nix those 24 carbs but to keep the same texture.

thanks christyjo! I plan on making this tomorrow so I won't have as much time to OVERindulge. :blush: Sans crust, as I don't really feel it's necessary for my tastes. I'm hoping I have some help eating it. Had a hard time finding True Lemon today. They changed their packaging and the one store that had it only had one box left.

OK, I just made this. It's YUMMY! I'm hoping I won't be ABLE to eat very much of this at one time--it's creamy rich.
