Magic Shell

So...my grandma brought home a big 'ol box of STRAWBERRIES

I admit...I had two :blush:

But anyway, I wanted to make my sister some chocolate covered strawberries (her fave) by using the coconut oil/chocolate mix. Well, she likes her chocolate milky so I added some heavy whipping cream and it was just a mess!

The chocolate was just not the right consistency...is it my ratios? I just kind of winged it...I added 1 T coconut oil (that I did measure) 2 lindt squares (I added more afterward) and just a splash of HWC and 2-3 drops of liquid sucralose. It was descent at first but after 2 strawberries it was REALLY greasy and kept separating. Even after stirring it would not mix. I started adding unsweetened cocoa, more lindt...but it was eventually dry so i added more HWC and alas, the greasiness again.

HELP!

this was my fave for strawberry awesomeness:

Chocolate Glaze

2 Lindt 80% dark chocolate squares (buy in candy bar)
1 Tbsp davincis vanilla sugar free syrup
2 small packets Splenda
2 Tbsp heavy whipping cream
2 Tbsp butter

In a microwavable bowl, combine ingredients. Microwave for 30 seconds. Stir well. Dip tops of crullers into mixture. Drizzle any remaining mixture to fill bare spots. Let crullers rest on cooling rack until glaze has set.

This does dry to a shiny glaze.

Keep unused portions and completes recipes in cooler temperatures.

Nutritional information for entire chocolate glaze recipe:
Calories: 349, Carbohydrates: 5, Fiber: 2, Net Carbohydrates: 3, Protein: 3, Fat: 36

Generally I start with an amount of warmed coconut oil, add my vanilla and sweetener (I like agave nectar), then I add cocoa powder and keep mixing it until I reach the consistency I want. Generally that seems to be about 30% coconut oil to 70% cocoa powder. I tried that on strawberries yesterday and it was delicious! I have in the past tried added HWC to the mix but I don't like the taste then, it tastes too fatty and seems to cover up the chocolate taste to me.

It's the low carb doughnut I put together below. The recipe's on my blog, but I'm trying to redirect and it says it could take until tomorrow. Blarg!

I probably broke something. Either way, the recipe's there and you'll be able to see it tomorrow. I'd link to it now, but it won't do you any good.

Yeah, the Magic Shell is ONLY coconut oil, sweetener and cocoa or chocolate (OK, vanilla if you want). Adding cream will ruin it, as you saw). You can make ganache, but it's not Magic Shell.
