Bluffin' Muffin

I just made this today....

It tastes AMAZING....like a spice cake!

2 tablespoons flax meal
1 scoop (20 grams) vanilla whey protein
1 tsp pumpkin pie spice
1 egg
sweetener (packet splenda, for example)
1 teaspoon butter

Mix together and microwave for about 1 minute

Nutrition information:
Calories 265
Fat 16.8
Carb (NET) 1.8 (5.8 before fiber)
Protein 22.6
Fiber 4 (already subtracted from carb count!)

Eat with cream cheese sweetened with splenda or eurythritol!!

WOW; its like a pumpkin bar (sans pumpkin)--or a really amazing spice cake. I felt like I was cheating and eating a cake!

Sounds really good. And with a whole scoop of protein powder plus the egg, it can be used as a meal.

I had it for lunch today...not hungry yet! And it is almost dinner time....

I am pleased because it was so delicious....I would love this as a breakfast!

Wow very similar!!

I have to invent things without Davinci I can't buy any sugar free syrups here....

And pumpkin is also hard to come by. Hence the vanilla protein powder!

I can imagine this one would taste amazing, tho!! If only I had pumpkin!!

Made this this morning with a few tweaks. I left out the butter, so I could spread it on the finished muffin. Also I sweetened it more and added baking powder. It was very good. i will definitely make it again. It seems to be a cross between the OMM and Ms Woods' whey protein cake. I like it becuase it's quick, tastes delicious, and has enough protein to keep me going until the next meal. Thanks for the recipe.

I forgot to add that I added quite a bit of Davinci's caramel syrup. Otherwise it would have been too dry, I think.

I made one this morning, following the original recipe, then cut it in half and toasted it in the toaster and ate it with cream cheese. It was delicious and easy. It was cruncy and had just the right texture after toasting. It really hit the spot.

I think I will try the "Everything Bagel" recipe using this method.
