Fast and Easy Microwave Bread Pudding
What do you think? Look good? I found this on the King Arthur Flour recipe site. Re-did it just a bit. I plan to give it a try.
Fast and Easy Microwave Bread Pudding · 1/2 – of a one minute muffin · 1 teaspoon soft butter · 1/4 teaspoon cinnamon-“sugar-sub” · 1 large egg · 1/3 cup half & half · 1/4 teaspoon vanilla extract 1) Spread the muffin with the butter and sprinkle with cinnamon-"sugar". Cut into 1/2-inch cubes. 2) Put buttered muffin into bowl. 3) Whisk together…egg, milk, vanilla and sugar. Pour over muffin, stir gently to combine. 4) Microwave for 2 minutes, uncovered. Check to see if it’s still liquid. If it is microwave in 30-second bursts until pudding is cooked. 5) Serve warm with whipped cream

This sounds really good. I'm not a fan of the one minute muffin but I love Sherrie's Savory Burger bun recipe without all the spices and a little sweetener added. It's lighter and fluffier than the OMM and I bet it would be an excellent sub. I make it with the almond flour bake mix recipe in that thread, tweaked it with buttermilk powder instead of liquid. It has an excellent bread like texture. In fact I just made some of these buns into a kind of sticky bun thing that was pretty good. I think this recipe would be even better.

Best Burger Bun Yet! Super Easy Too!
Sherrie's Savory Burger Bun *Preheat the waffle iron 1 8oz Pkg cream cheese 3 eggs 3 tsp Splenda 1/2 cup Atkins Bake Mix 1/2 tsp baking powder 1/2 tsp garlic powder 1/2 tsp onion powder 1 tbsp parsley flakes 1/4 cup buttermilk Beat cream cheese with mixer until blended smooth, add the remaining ingredients. Spray pan with a light coat of olive oil flavored non stick spray and pour in pan about 1 tbps of mix. It will make a perfect round bun! You can freezed them and reheat them in the toaster! My hubby says this is the best bread yet. It should come out to about 1 carb per bun! Thanks Gina...I have everything but the protein powder. My son uses that to make shakes after his workouts but he always gets the chocolate. I'll see if I can pick up a small container of it at Walmart and try it out.

Sorry I don't know how to post links. I guess I should figure that out..but here's the almond flour recipe. Don't know who this recipe came from. The only thing I changed was to add 1/4 buttermilk powder to this instead of adding buttermilk to the bun recipe. It turns out quite good and it's one of the few things I've been able to make successfully. I haven't tried it in anything else but plan to in the next few days.
1 C Almond flour 14 g 1 C Vital Wheat Gluten 24g 1 C Plain whey protein powder 6g 4 pkts splenda 3.2 g 2 T baking powder 6g 1/2 t baking soda 0g 1/2 t salt Mix all together and store in a zip lock bag in the fridge. When a recpie calls for bake mix, just measure according to the recpie. Oh yeah..I forgot. I don't make these in waffle iron. I bake them in small quiche dishes to make buns which I then split in half for sandwiches and burgers. I prefer these to oopsies although I like oopsies too.
