I'm thinking of just making the sauce LOL It is sooooooooo good! The only thing stopping me from heating one up right now is that it's almost 1 AM and DH is asleep and I'm afraid of going down to the kitchen to do it. LOL

Everyone has such great things to say about this I wanted to try it, but only had cooked chicken legs and thighs. I made a double batch of sauce, poured over the chicken, warmed it up in the microwave. There was enough sauce to put on Quinoa too. With a salad it made a nice meal on a hot day with little preparation...............Ann

Delicious! Tried it tonight. Hubby and DS loved it, too.
Of course, I accidentally used twice the butter called for (whoops!!!) -- not that that hurt the flavor at all... heh heh. |

Made this again, this time with thighs and breasts. Unfortunately I didn't like the thigh part in this recipe. The dark meat flavor overwhelmed the spices.

I had posted this recipe in a different thread a while back, but it didn't catch on at the time. I just did a search and the thread I posted it in didn't show up, but I guess this recipe was posted before I joined here. Someone mentioned it's good with zucchini noodles..I never thought of that!! Gina, I just made the recipe for dinner tonight. I have it holding in the crock pot. I plan on having mock mashed pot's. and gr. beans to go along with it.
The sauce really reminds me of a white gravy. It is SO good!!!!! ![]() Thanks for sharing the recipe with us. |

You are welcome!! The thing I also love about this recipe is, it doesn't heat up the kitchen since the hot weather is here, if you don't feel like cooking on the grill. I love the ideas for the side dishes you are having with it!!
I am about to post another recipe with a cream sauce that is cooked on the stove, just like this one. Just as tasty and easy!! This sauce is also good with pork chops, hamburger patties, shrimp, fish filets, and turkey breasts. You can also vary the spices that you put with it...I love it.

Just made this for dinner and served it over shredded cooked cabbage and zucchini (because that's what I had on hand) and it was yummo.
DH and the kids both liked it. Thanks for this keeper of a recipe. It will be in our regular rotation. I'm looking forward to trying the creole one too!! ![]() |

I had to make this again last night because my DD came for a visit and said she couldn't stop thinking about it after having it the last time she was here. I have to say I was thinking I wouldn't care to have any after eating it two weeks in a row, but I happily snarfed some down...lol.

Oh, I'm so glad this thread got bumped! Sounds delish, especially with the spinach, CM. There's a local Italian restaurant that does a creamy chicken/spinach tortellini dish your variation reminds me of. Mmmm.

Holy mother of pearl this is good! I had leftover chicken from last night so I coated the already cooked chicken in the seasonings, melted 2 tbs butter and added the chicken. Then I addded sliced, raw zucchini and 1/2 a cup of half and half (that's all I had on hand) and I just let it simmer until the zucchini was soft. It was absolutely fabulous and so easy! This will be a weekly meal in this house going forward!

I've made this and it always comes out really well. I'm eating the left overs for lunch right now, and they are even better.
One thing I did was I made extra of the spice rub and put it in a sealable container, a little goes a long way - but it's nice to have some extra as you're cooking so you can season as you go. Plus, I can use it on other items. I also tried a few different variations, this is what worked well: If cooking chicken or turkey: add about 1/2 tsp of ground sage - it mellows out the bite of the chili and makes the whole thing creamier somehow. It adds a flavor is very much like a dish at a local restaurant that I just adore, I could drink the sauce. Replace half of the chili powder with Paprika and add 1/2 tsp of cayanne and fresh ground black pepper - this works really well on beef roast and in burgers. It's really a great recipe and the technique is very versatile, delish! |

Just took chicken breasts out of the freezer and was wondering what on Earth I was going to do with them...then I came across this thread. It just so happens I have all the ingredients on hand, so this will definitely be dinner tonight!
