Savory Italian Bread Pudding
I started a thread with a recipe for a sweet bread pudding and Barbo suggested trying a savory bread pudding so I Googled several recipes and put this one together as an experiment. I really liked it and the family did too.
Savory Italian Bread Pudding Make (4) 1 minute muffins…slice into 4 slices each 1 small package of sliced pepperoni 2 medium size tomatoes, halved and thickly sliced 1 can of sliced mushrooms Green can Parmesan cheese 2 cups Mozzarella cheese 8 large eggs 1 cup LC milk 1-1/4 cups sour cream Garlic salt Italian seasoning Pepper Preheat oven to 350° Spray with cooking spray a 9x13-inch baking dish Cover the bottom of the baking dish with muffin slices. Cover muffin slices with pepperoni. Cover pepperoni with tomato slices Sprinkle mushrooms over tomatoes and pepperoni Sprinkle with garlic salt, Italian seasoning, and Parmesan cheese to taste Whisk eggs and sour cream together until smooth, add milk and stir. Fold in Mozzarella cheese and pour evenly over pan. Bake at 350° for 40 minutes or until custard is set. ![]() ![]()

Chicken Lady, do you think the one minute muffins are probably as good, or maybe even better, for this particular purpose than something like Kevin's "pita" roll bread?

If you don't have a garden try to find some home grown tomatoes at a fruit stand or farmer's market. They make it a really special treat.

I meant to post on this last week but forgot! This was fantastic. I love custards, and bread pudding and this was super. It tasted a lot like pizza to me, but even better (the farm fresh tomato really was key, so yummy!). Thanks for this recipe! I made a few modifications based on what was in the fridge (and I 1/2'd the recipe because DH doesn't like bread pudding) and it was great as breakfast/lunch or dinner!

My that looks fantastic...............
I often revisit the sweet bread pudding recipe and gaze at it. I still haven't made it, but I plan on it. I'll also be making this one when my tomatoes ripen. Thanks for all your hard work. I have found that I like the sweet version with some cream in it, not just the milk. It just makes it way yummier.
