Vietnamese Pho Soup Using Miracle Noodles
Here is a great Vietnamese Pho Soup minus the rice noodles
adding in Miracle Noodles instead. This is a great recipes from the food network. 1-2 Bags of Miracle Noodles 12 ounces lean beef sirloin (optional) Kosher salt and freshly ground pepper 1 large onion, halved 1 4-inch piece ginger, unpeeled, halved 3 cups low-sodium beef broth 5 star anise pods 1 cinnamon stick 4 scallions 2 jalapeno peppers, preferably red and green 1/2 cup fresh cilantro 2 to 4 tablespoons fish sauce(or soy sauce) 1 cup fresh bean sprouts Directions Prepare Miracle Noodles by boiling for one minute and then drying. Meanwhile, place a large pot over high heat. Poke the meat all over with a fork to tenderize it and season with salt and pepper. Sear the meat until charred but still rare, 2 to 3 minutes per side, then transfe r to a plate. Add the onion and ginger to the pot; cook about 4 minutes. Add the broth, 3 cups water, the star anise and cinnamon, reduce the heat and simmer about 20 minutes. Meanwhile, thinly slice the scallions and jalapenos (remove seeds for less heat) and tear the cilantro. Thinly slice the meat against the grain. Drain the noodles. Add the fish sauce to the broth and boil 5 minutes. Discard the ginger, star anise and cinnamon stick. Remove and slice the onion. Divide the noodles among 4 bowls; top with the broth, beef, scallions, cilantro, bean sprouts, jalapenos and onion. Per serving: Calories 134cal; Fat 4 g (Saturated 1 g); Cholesterol 34 mg; Sodium 961 mg; Carbohydrate 7 g; Fiber 2 g; Protein 22 g

HA HA ladies, well you'd laugh because my kitchen is affectionately referred to as "the butt bumper" and both DH and DSS KNOW to stay OUT of there if I am in there!
I have annexed the hallway cupboards, the cupboards in the dressing area, the closet off the spare bedroom, and parts of the shed where our freezer is to house all my goodies - kitchen toys AND foodstuffs. It can be a comedy of errors trying to direct DH to find, say, the jar of sugarfree Mt. Olive sweet gherkins..... ![]() |

BTW Beeb, I kind of laugh to myself whenever I see this thread - we have a Vietnamese restaurant here called "Pho King" - which if you KNOW how they pronounce "pho" and run those two together -

Thanks for bumping this -- it's brrrrr cold here in MN today and some soup sounds like just the thing to plan on making later this week.
I've never made pho before. . . for my non-LC miracle-noodle-hating hubby (well, to be honest, I'll much prefer the rice and will probably use that even in the soup!) what kind of noodles should I get? Have a great Asian grocery here but need to know what I'm looking for. |
