I use a deep fryer like a Fry Daddy or an electric Turkey Fryer so yes, it's always more than a couple of inches (item being fried is completely submerged):
Turkey, 3 minutes/pound (14 pound max. Anything larger doesn't fit). 400 initially then reset to no hotter than 350 Catfish, about 5 minutes @ 360. Chicken wings, 12 minutes +/- @ 360. If you plan to fry much, I recommend getting at least a small fryer where you can set the temp. It's much easier than messing with frying on the stove. I love frying mushrooms and onion rings but haven't made any since LCing cuz I've always fried those with batter. |

Another question. Do you just leave the oil in the fryer, and where do you store it. TIA Julie

good thread. i want to make fried chicken, fried cheese, and fried fish. i guess a fryer would be worth the expense then!

I wish they had left this in the main lobby. I expect we might have gotten some interesting comments.
I don't have a 'deep fryer', I just wanted to use my frying pan, which is about 3" deep and simply turn the food when half cooked? What kind of breading, batter, coating would you use? |

i use canola oil (grapeseed) and i dip whatever in beaten egg then roll in crushed porkrinds with seasoning and sometime parm. cheese. the whole family eats it lowcarbers and high carbers unite...cod fish is great this way and also just tossing in whole small mushrooms or thick sliced mushrooms with no coating and dipping with ranch is great

Catfish, hushpuppies (made with LC cornbread mix), onion rings (battered with Carbquik/beer) - those are my faves!
Also the pumpkin beignet recipe I posted a while back is great deep-fried. I use lard, expeller-pressed coconut oil, peanut oil, or rice bran oil. Depends on what I'm making and whether I want it to have a flavor from the oil on it when finished. |
