Flax Pancakes!!!
6 tbsp of flax meal
3 eggs 1/4 - 1/2 of cinnamon 1 tsp of baking powder Pinch of salt 1 tbsp lc milk or cream and water 1 tbsp sf vanilla syrup or 1 tsp of extract + 2 tsp water 1 - 2 tsp splenda Had to say THANK YOU! to the unknown contributer of this WONDERFUL recipe!! it was posted in 2004 or 2005 i think... and i havent been able to find it by searching to be able to thank anyone... so here is your THANK YOU!! NEVER thought i would be able to eat pancakes on LC and the whole mix has 3 net carbs!!!!! and they are OO SOOO FILLING!! dont think i could eat the whole mix (as much as i might want to). ate about half of them and I am so stuffed! THANKS AGAIN!

Where so you get Flax meal? Do you order it? Can you buy it in the stores? I've looked at Schnucks and Walmart, and haven't been able to find it?

That recipe looks so innocent, but when I cook pancakes I end up putting a lot of oil or butter in the pan, so the calorie count REALLY goes up. About half that recipe would be right. Thanks for the suggestion, I have some DaVinci Pancake Syrup and that would be a great use for some!
And Netrition sells Flax Meal, the type I use. They support this site, remember! And they have all sorts of great stuff, with cheap shipping. I got that syrup there. Last edited by ravenrose; 03-14-2010 at 01:23 PM.. |

I have made the 'internet muffins in minutes' recipe from the recipe section a few times when i was feeling real hungry and it is a little miracle! lol.... i get so full from it and its carb count is so low. RavenRose-- I agree that it could be ruined if not careful.. i used pam to spray the pan, a little bit of butter on top and some SF pancake syrup. yum yum yum. just gotta be able to be good with that kinda temptation. also i saw someone suggest heating up a little SF jelly/jam with a little water for 45 seconds in the microwave and using that as a topping Last edited by Angelad653; 03-14-2010 at 02:23 PM.. |

Make sure you buy flax MEAL not flax SEED as shown in the picture above. If you by the flax seed you have to have a grinder to grind it up. I learned that lesson.

I made these yesterday and they were quite good. I used the golden flax meal, and drizzled just a dab of sf syurp on them. It's nice to have a variety of things to choose from to keep it interesting. Just wanted to say thanks!!

I made these for breakfast and used the waffle iron.....DELISH. I drizzled some organic honey over the top. I changed up the recipe just so slightly and will post it below with a picture of my waffles. Thank you once again for reviving this recipe

it definataly helps to have some variety in our diets, now i dont look at bread and muffins and things like that with an evil eye! Wow on the waffles I made a chocolate chunk muffin with flax and some bakers chocolate last night too! it was SOOO good! there is so much we can change about these recipes to make them our own. Yummmm Yummmm hehe |

I think blueberries added to the batter would be very good too or even some nuts or seeds. This recipe reminds me of the LC McGriddles post we had going here many many years ago. Anyone remember that?

For those of you looking for Flax- check your grocery store bulk section- stores like Fred Meyer sell flax in bulk for under a 1.00 a pound. Yes these are the seeds- but if you use a lot of flax you will save a ton of money. I have a cheap coffee grinder from wal-mart that i use only to grind my flax seeds- it is real easy and they are freshly ground.

If you have Big Lots near you, they often have Bobs Red Mill flax meal on sale for 50% off what you'll find at Krogers. It will freeze easily, so I stock up when I can get it cheap.
