Taco salad Caesar with grilled chicken and fried Parmesan cheese broken up all over it. Excellent flavor and crunchy like croutons!! |

Crisp iceberg lettuce with julienne of baked ham, natural Swiss cheese, tomato, olives, grated Romano cheese and our famous garlic dressing (our 100 year old family recipe of fresh garlic, oregano, wine vinegar and Spanish extra virgin olive oil). I sub pepperoncini for the olives, and romaine or other lettuce for the iceberg sometimes. This is really excellent. |

I love a "house salad" with romaine, cucumbers, mushrooms, cheese, egg, and crumbled bacon all topped with ranch. YUM!

I just made it tonight..lettuce, spinach leaves, grilled chicken tenders chopped up, thinly sliced cucumbers, green peppers, onions, tomatoes, black olives, shredded white cheddar cheese then I top it with Caesar dressing. Sometimes I use feta cheese instead of the cheddar and use Italian dressing with grated Romano cheese.

Red Bell Pepper Sweet Onion Danish Blue Cheese Creamy Balsamic Dressing (recipe below) Creamy Balsamic Salad Dressing (I think this is from a Dana Carpender book) 1/2 cup real mayonnaise 3 TBS balsamic vinegar 1 clove garlic, crushed or pressed (I generally press 2-3) Combine all ingredients in a bowl and whisk until smooth and creamy. Store in fridge with a tight fitting lid. YIELD: 6 servings, each with 1 gm carbs, a trace of fiber and a trace of protein. |

Atkins Cucumber-Avocado Salad With Cumin Dressing
SERVES 6 1 teaspoon ground cumin 3 tablespoons fresh lemon juice 1/3 cup olive oil salt pepper 6 cups mixed salad greens, washed 1 small avocado, peeled, pitted, and cut into 1-inch cubes 1 tomato, cored, seeded and chopped 1 small cucumber, seeded and diced 2 tablespoons red onions, finely chopped In a small dry skillet over low heat, toast ground cumin 2 minutes or until fragrant, stirring occasionally. Add lemon juice and whisk well. Add oil in a thin, steady stream, whisking until blended. Add salt and pepper to taste. In a large salad bowl, combine greens with 1/4 cup dressing; toss to coat. Place on serving plates. Mix avocado, tomato, cucumber, and onion with dressing; toss to coat. Top each portion of greens with avocado mixture. |

ICEBERG WEDGE WITH WARM BACON AND BLUE CHEESE DRESSING
The classic combo is back — and bacon makes it better than ever. 1 1/2 cups mayonnaise 2 tablespoons fresh lemon juice 1 tablespoon coarsely ground black pepper 1 teaspoon hot pepper sauce 1 cup coarsely crumbled blue cheese Buttermilk (optional) 1/2 pound thick-cut bacon, cut crosswise into 1-inch pieces 1 large head of iceberg lettuce, cut into 6 wedges, each with some core attached 1/2 red onion, very thinly sliced Mix first 4 ingredients in medium bowl. Add blue cheese and stir until well blended. If too thick, thin with buttermilk by tablespoonfuls to desired consistency. (Can be made 1 day ahead. Cover and chill.) Cook bacon in large skillet over medium heat until golden brown and beginning to crisp. Arrange lettuce on plates. Spoon dressing over. Using slotted spoon, transfer warm bacon from skillet onto salads, dividing equally. Garnish with red onion. Makes 6 servings. Bon Appétit January 2006 |

Greek Salad is my fave. My version includes:
Mixed Baby Greens Sliced Cucumber Halved Cherry Tomatoes Kalamata Olives Crumbled Feta Cheese Sliced pepperachinis Homemade Greek Dressing (olive oil, red wine vinigar, lots of oregano, garlic and onion powder, salt and pepper, dijon mustard) I could eat this day and night! |

There are various Cobb Salads. I like the one made with lettuce, grilled chicken, bacon bits, chopped egg, tomatoes, avacado, and shredded cheddar cheese. I use mayo as my dressing.

This is from 5cats4me (my favorite salad):
Awesome German Salad!! You have to try this!! It is a recipe from my grandmother, that I adapted using Splenda... My DH and sister both loved it too! German Salad 3 slices of bacon 2 tbsp. of vinegar 2 tbsp. Splenda 2 big tablespoons of mayo 2 hard boiled eggs, chopped Prepare a salad as usual with lettuce and favorite veggies. Put in fridge. Fry the bacon and drain on paper towels. Save the grease! Let it sit until it no longer spits (10-15min). Add remaining ingredients to the grease and stir until mixed and warm. Pour over your salad and toss. Crumble bacon pieces over the top and enjoy!

Julie..... What all is in your salad....and do you make your own dressing?
I don't know what is wrong with me but I just don't like most salads... I will make a taco salad or coleslaw and tuna or chicken salad spreads but I usually eat veggies with my meals instead. It seems like the salads that sound good to me are ones that include fruits..... and I like sweeter dressings like poppy seed or some of the vinegarettes that they sell in the stores but they are to high in sugars........ glad this thread was started, maybe I'll see something I will want to try. |

Well, shoot, I had the recipe for strawberry spinach salad all typed out and the web site went down, so here it is again.
Strawberry Spinach Salad Dressing: 2Tbs sesame seeds 1 Tbs poppy seeds Sweetener equal to 1/2 cup sugar ( I use liquid splenda) 1/2 cup olive oil 1/4 cup raspberry vinegar 1/4 tsp. Paprika 1/4 tsp Worstershire 1 Tbs minced onion Salad 10 oz. fresh baby spinach 1 qt. strawberrys, cleaned, hulled and sliced 1/4 cup almonds( I get the sliced ones and put them in a samll frying pan with a sugar sub until they get browned and sugary. In a med. bowl whisk together, all the dressing ingredients. Let sit in fridge for an hour. In a large bowl, combine the spinach, strawberries, and almonds. Pour dressing over and put all in fridge for 10-15 minutes |

This might sound wierd to some, but I like regular salad with lettuce, cucumbers, celery, green pepper (or whatever I have). Fry up 3 or 4 pieces of bacon and drizzle the warm bacon grease on the salad and top with shredded cheese and crumbled bacon.
My gradmother used to make this and she called it wilted salad, but the bacon grease on the cold salad is really good. I don't find a need to add anymore dressing, but sometimes but just a little Ranch on for a different flavor. |

LOVEMYGRANDS, I make a salad similar to this but use Spinach, HB eggs, Mushrooms, and bacon bits. I make the dressing out of the bacon grease, and add some vinegar and sweetner. It's just wonderful. Julie
