Judy, I second that salad you mentioned! The German Bacon Salad with warm dressing is unbelievably good. Every since 5cats4me posted that, I've been making it quite often to rave reviews I might add!
I also like the Strawberry Spinach Salad and a Mandarin Orange Salad that I sometimes used to make, but haven't made in ages. |

Thanks Julie for posting the recipe.... I have most of the ingredients for the dressing so am going to pick up the salad fixins.... Do you have a dressing recipe that would be good on a salad with apples and walnuts?? I tried yogurt with splenda and cinn..... not too good....

Warm Duck Salad
Cook a duck breast until done, as you like it. I like mine fairly rare but with crispy skin. Slice thinly.
Arrange over a salad with the greens of your choice. Dress with lime juice, sea salt, a bit of soy and sesame oil - and perhaps ginger and/or garlic. |

Ok, I think I must amend my favorite salad. Just tried the Big Mac Salad... and omg it's so good. My husband looked at it skeptically, tasted it and was like 'omg it tastes just like a Big Mac, why didn't we think of this earlier?!?"
One bowl was more than satisfying. |

Here is what I had tonight ~ another fabulous salad.
My version of Greek Salad Romaine lettuce, washed, dried and torn into bite-sized pieces Tomato wedges Thin sliced cucumbers Thin sliced red onions Whole pepperoncini Pitted Kalamata olives Diced or crumbled Feta cheese (I prefer the stuff in the salted brine) Greek Salad Dressing (recipe to follow) Make up each salad by placing the romaine lettuce in salad dishes. Top with a few of each ingredient and then dressing. Greek Salad Dressing 1/2 cup extra virgin olive oil 2 TBS red wine vinegar 1 TBS fresh lemon juice 1 tsp garlic powder 1/4 tsp fresh ground pepper 2 TBS dried oregano, crushed 3/4 tsp salt 1 TBS grainy Dijon mustard 1 pinch of thyme In a bowl, whisk together dressing ingredients except olive oil until smooth. Gradually whisk in olive oil in a steady stream till thickened. Cover till ready to use. I like to prepare at least an hour ahead to let the ingredients reach maximum flavor. |

Delicious Oriental Salad
Hope I'm not repeating posting this but it is one of my favorites.
1 large Nappa cabbage - chopped or slivered like coleslaw 4-6 green onions - chopped 1/2 cup fresh chopped parsley 1 cup toasted slivered almonds 1 cup toasted sunflower seeds (salted or unsalted) 2 pkgs "Chicken" ramen soup mix crushed (I only use 1 pkg of the noodles and I am still in Ketosis) The 2 pkgs of stock that come with the above ramen soup mix Dressing: 1 cup oil(olive or veggie or canola or combo of oils) 6 teaspoons tarragon white wine vinegar 1/4 teaspoon salt 3-4 pkgs Splenda (instead of the 4 teaspoons sugar recipe actually calls for) The 2 pkgs of chicken stock that came with the 2 noodle soup mixes. Tastes even better the second day. We love this. ![]() |

I used to hate salads. It was the lettuce, mostly. I'd eat plenty of salad vegetables, just not combined with lettuce. But then I had a combo called chicken bacon bleu at Culver's and it changed me.
Cooked chicken breast Crumbled bacon Dried cranberries (I know these are not LC, but they definitely make the salad. I only use a tiny amount) Bleu cheese crumbles Lettuce I top it with home made bleu cheese dressing from a recipe I found online. Bleu Cheese dressing Ingredients * 3/4 cup sour cream * 1 1/3 cups mayonnaise * 1 teaspoon Worcestershire sauce (I didn't like this, so I leave it out) * 1/2 teaspoon dry mustard * 1/2 teaspoon garlic powder * 1/2 teaspoon salt * 1/2 teaspoon ground black pepper * 4 ounces blue cheese, crumbled Directions 1. In a large bowl, whisk together the sour cream, mayonnaise and Worcestershire sauce. Season with mustard, garlic powder, salt and pepper. Stir in blue cheese. Cover, and refrigerate for 24 hours before serving. |

I really love a loaded salad-bar type of salad drowning in ranch, bacon crumbles, etc. But, my daily craving is for greek salad - cukes, red onions, kalamata olives, feta, and red-wine vinaigrette.
Caesar pulls a close 3rd. Chinese chicken salad 4th even though I haven't had it in ages. lol |

I tried a new salad this week and fell in love with it. I found it in an Amish Cookbook. I am sure the salad has a "real" name but this is what it was called in the cookbook. I omitted the croutons.
That Good Salad 3/4 cup vegetable oil 1/4 cup fresh lemon juice 2 garlic cloves, minced 1/2 teaspoon salt 1/2 teaspoon pepper 2 heads romaine lettuce - rinsed, dried, and torn into bite-size pieces 2 cups chopped tomatoes 1 cup shredded Swiss cheese 2/3 cup slivered almonds, toasted 1/2 cup grated Parmesan cheese 8 bacon strips, cooked and crumbled 1 cup Caesar salad croutons 1. In a jar with tight-fitting lid, combine oil, lemon juice, garlic, salt and pepper; cover and shake well. Chill. In a bowl, toss romaine, tomatoes, Swiss cheese, almonds if desired, Parmesan cheese and bacon. Shake dressing; pour over salad and toss. Add croutons and serve immediately. |

This is an adaption of Rachel Ray's recipe and changed slightly. I never had a Chicago hot dog before but it sounded really interesting so I had to try it in salad form. Both hubby and I really liked this salad but next time I will just use all Romaine lettuce or a Romaine/Iceberg mix. Not sure why RR would use raw cabbage instead of all lettuce because I think all lettuce would have been better. Also, Chicago Hot Dogs have hot peppers on them called Sport Peppers. I added some hot pickled pepper rings to ours!
Chicago Hot Dog Salad Dressing: 2 tablespoons yellow mustard 1 tablespoon vinegar 1-1/2 teaspoons sugar or sweetener of choice 1-1/2 tablespoons oil Salad: 4 ounces coleslaw mix, about 3 cups loosely packed 4 ounces iceberg or romaine lettuce, chopped, about 2 cups loosely packed 1 ounce red onion, thinly sliced, about 1/2 cup loosely packed 3 ounces grape tomatoes, halved, about 12 2 ounces dill pickles, coarsely chopped, about 10 chips or 1 large pickle Salt and pepper, to taste 2-4 Kosher hot dogs, cut into bias slices In a large salad bowl, combine the mustard, vinegar, sugar and oil. Add the cabbage, lettuce, onions, tomatoes and pickles; toss then season with salt and pepper. You can mix up the salad, minus the hot dogs, ahead of time but don't let it sit too long or it will lose its crunch. Heat a large nonstick skillet that's been sprayed with nonstick cooking spray over medium heat. Arrange the hot dog pieces in a single layer; sear for a couple minutes per side until browned. Divide the salad between 2 salad plates and top with the hot dogs. Makes 2 servings |

1 head romaine lettuce, cut into 1-inch squares 1/4 lb sliced pepperoni or salami or prosciutto, chopped 1/3 cup drained sliced pimientos (one 4-ounce jar) 1/2 cup sliced green or black or mixed 1/3 cup chopped red onion 15 oz can garbanzo beans, drained 3 tablespoons red wine vinegar or white wine vinegar 1/4 cup olive oil 1/2 teaspoon salt 1/4 teaspoon fresh ground black pepper 1/2 cup grated parmesan cheese chopped pepperoncini pepper (optional) provolone cheese (optional) 1/3 cup of thin-sliced basil leaves (optional) 1. In a large salad bowl, combine first 5 ingredients along with any optional ingredients. Toss to combine. 2. Add vinegar, oil, salt, pepper, and Parmesan to the bowl. 3. Toss thoroughly to combine the ingredients. |

I'm with Nadi, for a "main" salad instead of a side salad, my favorite overall is Salade Nicoise! Instead of potatoes, I sub out slices of roasted caulflower! Romaine & mixed greens Green Beans Boiled Egg Purple Onion Roasted Cauliflower Fish (I use sardines, or salmon but it's made for tuna - I just don't eat much tuna) Nicoise Olives Artichoke Hearts Blue Cheese (this is my own addition, cuz I love it so much) Dijon Vinaigrette (Garlic, Dijon, Tarragon Vinegar, Olive Oil, Salt, Pepper - and sometimes I add an egg yolk for a rich, creamy dressing). For a side salad right now, my current favorite (and it changes all the time): Blue Cheese and Bacon wedge salad. But ask me next week, I'm sure that will change!

German salad
Here's a couple I have. German Salad with pic 5CATS4ME'S GERMAN SALAD 3 slices bacon, chopped 2 tablespoons bacon grease 2 tablespoons vinegar 2 tablespoons granular Splenda or equivalent liquid Splenda * 3 tablespoons mayonnaise 5 ounces romaine lettuce, chopped (see my comment below) 2 hard boiled eggs, chopped 2 ounces cucumber, about 8 slices 4 ounces grape tomatoes, halved, about 16 1 large mushroom, sliced thin 1 1/2 ounces red onion, sliced thin, about 1/4 cup Fry the bacon until crisp; drain on paper towels and reserve 2 tablespoons of the grease. Let the grease cool 5-10 minutes then add the vinegar, Splenda and mayonnaise; whisk well. In a large bowl, toss the remaining ingredients and the bacon. Pour the dressing over the salad and toss to coat. Makes about 4 very large servings German Salad with pic You have to try this!! It is a recipe from my grandmother, that I adapted using Splenda... My DH and sister both loved it too! German Salad 3 slices of bacon 2 tbsp. of vinegar 2 tbsp. Splenda 2 big tablespoons of mayo 2 hard boiled eggs, chopped bag of salad plus veggies Prepare a salad as usual with lettuce and favorite veggies. Put in fridge. Fry the bacon and drain on paper towels. Save the grease! Let it sit until it no longer spits (5-10min). Add remaining ingredients to the grease and stir until mixed and warm. Pour over your salad and toss. Crumble bacon pieces over the top and enjoy! It's not a very pretty picture, but it's so tasty! |

OK, everyone's got me craving salad now!
Favorite is a modified Cobb, Spring mix of salad greens Crispy bacon, preferably center cut Grilled chicken breast Hard boiled eggs Crumbled feta Grape tomatoes Diced cucumber Avocado Chopped green onions, both parts Chopped mandarin oranges (which may be out or at least minimized now that I'm LC) Splash greens with a bit of raspberry vinaigrette and toss, top with all the other goodies and homemade bleu cheese dressing. |

Subway! Lettuce, cucumbers, green peppers, onions, a few jalepenos, cheese, chicken and bacon with 2 packets of regular ranch dressing. Sounds plain but I could eat that every day!! And it so happens that's what's for lunch tonight at work, minus the jalepenos, I had an upset tummy yesterday. I also add French fried onions to it, nummy!
