yea I had no luck with the almond milk making pudding, I have heard it works with the cook and serve....I just pour the thinner mixture in popcycle trays and make great pudding pops!!

I made banana cream pie this past weekend to take to my Dad's - I used 2 small boxes of SF instant banana pudding, 2 cups half & half, and 3/4 cup Trader Joe's coconut milk in the aseptic cardboard carton. It set up thick and wonderful and tasted great.
Next time I'll probably use half coconut milk and the other half, half & half, just to shave off some calories. |

It was really good, Essy! I made an almond flour crust, sliced up 2 medium bananas, and the pudding, plus a little SF whipped cream on each serving. It made 12 servings - I made it in a tart pan instead of a regular pie pan, so each piece wasn't overly thick, just about right though IMHO.

yum!
I just made a box of cook n' serve chocolate Jello pudding. For a box that serves 4 I used one and three quarters of a cup almond milk and one qaurter cup of cream cheese. It set up perfectly and tasted deliciously cream:-)

I like to make SF pudding with plain yogurt, and mix it well. I just stir the SF pudding powder to taste, into a serving of yogurt. On occasion, I make a large container of yogurt with a box of SF pudding, and that works well also. The Cream cheese "yogurt" pudding turns out just like a Cheesecake. We had it with a blueberry topping recently. Very good! We also like chopped nuts on top.
