In celebration of the Saints: Seafood Gumbo (Atkins recipe, tweaked) and muffaletta dip.
In celebration of the Colts: Shrimp cocktails and cheddar-horseradish spread. In celebration of the game itself: smokies in LC BBQ sauce or maybe inside jalapeno poppers; wings or leftover ribs; coleslaw; cheesecake for dessert. I'll set out cucumber rounds, endive leaves, and fiber crackers as "dippers" -- everything will be LC-friendly. |

Thank you for the bump! I started reading this thread and didn't note the dates and when someone said go Colts - I thought What??? LOL Then noted the dates.
You're right - lots of good ideas. I've always fixed Chile so folks could eat then they wanted to. No folks around this year, but will continue my tradition. I'd be rooting for the 49ers, but love Joe Flacco. I'll probably be rooting for the underdog. Unbelievable two brothers are the managers of each Super Bowl team against each other.

Baby back ribs cooked on the BGE using Bad Bryons Butt Rub (sugar free) Cole slaw Broccoli salad Cowboy Caviar Salami and cheese cubes Broccoli florets & celery for dipping into salad dressing (blue cheese & ranch) Clam dip (thanks Charski) with pork rinds for dipping Three types of deviled eggs (plain, with sugar free pickles & candied jalapenos) Bacon wrapped jalapenos stuffed with lil smokies (dusted with Bad Byon's rub) Ham rollups with cream cheese & pickled okra All of these work great for gametime and for leftovers the rest of the week. |
