Taco night!! We love tacos and I wanted a crispy shell so I made one with cheese. I just spread it out on a plate and microwaved until brown a crunchy. It was really good and stayed together until the end.

Quesadilla
Not the best picture but it sure tasted yummy!
Oat Fiber and Psyllium Husk tortilla filled with chili seasoned ground turkey and cheese. I added a bit of salsa and greek yogurt to top it off. |

I'm on set today so I've only got my phone with me. I'll post the recipe when I get home. It's pretty much just oat fibre, psyllium husk, egg white, spices and this time I added a little flax.

I was doing background (extra) on Copper (a TV series)
This is the recipe I've been using for tortilla's. 1/2 tbsp Psyllium Husk 2 tbsp Oat Fiber 500 1/2 tsp Spices, Onion Powder 1/2 tsp Garlic Powder 30 g Simply Egg Whites 1/4 cup Water - enough to make a runny batter. 10 g Whey Protein Concentrate, Unflavored - Progressive organics brand Dash of salt 1/4 tbsp sweetener 1/4 tsp glucomannan Mix dry ingredients, add eggs and water. Pour into greased pan and spread as you would a crepe. Cook until the top is completely dry then flip and cook the other side. The picture I posted also had 1/2 tbsp flax meal and an extra 10g of egg whites. Per Livestrong the original recipe based on the ingredients I'm using has the following stats, but I think there must be a mistake as the dietary fiber is higher than the totoal carbs? Calories 67, total carb 8.58g?, dietary fiber 11.9g?, sugars 0.73, protein 11.95g Last edited by Yaz; 02-19-2013 at 04:48 PM.. |

Yaz - I just noticed your nutritional stats and I don't think they can be correct, you have less carbs listed than total fiber and that just can't be, I haven't figured them myself but thought I'd point it out.

Made something
Finally made something different. I know its old hat to others who have done this a while. Making the oppsie rolls. I tend to just eat meat salad and vegetables. But always restarting over and think if I am going to stick with it I am going to have to cook more things and try what others are doing that have been low carbing a while and sticking with it. I've attempted the oppsie rolls 2 times the first they were large and thick bland didn't care for them. This time they were flat liked them better. I decided to use them like someone else mentioned like for bacon lettuce tomato. I added cheese, green pepper onion just a little bit. They were ok better then the not eating which is what I've been doing for breakfast. Also made the low carb milk enjoyed that. I really want to get use to eating low carb. It took me 20 years to learn to cook regular food just not a natural cook hopefully won't take me that long cooking low carb.
