i am sitting here listening to an opera while looking

at these recipes. OH MY GODs, what a joy. I must pause to wipe the spittle off the keyboard. I am curious to know what y'all are making for TG, but especially Cleo, the culinary Goddess, and Goddess in general is creating for TG dinner. I myself will be quite minimalistic, as it is only me. My (earth) brother & sis-in-law are driving down to Florida tomorrow a.m. This is most fortuitous, as I will be in total control. So, here it is: Turkey breast (on the Ronco), a melange of sauted veggies, my legendary TROLL SLAW, and if it works, a pumpkin mousse consisting of pumpkin (canned)with whipped cream, cinnamon and pumpkin spice. I will take pix of it all, and someday figure out how to post them here. So, whether I am able to get back to this thread before TG, or not(though I think I will), enjoy TG. Mmmm, Essie, those look good!!

DH and I made no sugar added grape jelly and pomegranate jelly. They turned out SO good! The Ball no or low sugar pectin works great.

I also made my cranberry jalapeno sauce and canned 7 half-pints of that - but we've already eaten 4 of them!

I used that Ball pectin to teach my neighbor's daughter to can jam. It worked out great for her.

Mexican Wedding Cookies GF

1c. almond flour
1 T. coconut flour
1/3 c. + 1 T. butter or coconut oil
dash of stevia
2 T. powdered non-GMO Xylitol ( you can use E. here)
8 drops liquid sucralose
1/2 tsp. vanilla

Put the 2 flours in a bowl and set aside. Cream all the sugars , vanilla with the butter or coconut oil , now add the flours and mix well. Form into little balls about 1 inch. Bake at 300 for about 15 minutes. You can double this recipe. It make 20 cookies. I wanted to see how I did before I made a bigger batch.

I rolled them in powdered Xylitol . You can use splenda in the big bag.
Roll them while they are still warm.

I love them. My favorite cookie.
