That looks delicious Robin!
Here's what I made the other night. The best Chinese food replacement ever! ![]() Fantastic! Spaghetti Squash, peppers/onions, "Asian Medley" (Green Giant, I think), beef bouillon, and steak. |

Just wanted to pop in and say the Asian Medley was Bird's Eye brand, not Green Giant. My bad.
Still, AMAZING! ![]() |

okay, I know everybody out there has tried the almond orange cake but me. OMG, I finally made it last night and it is one of the best things I have ever eaten! Recipes abound on the internet, so I'll just say, 6 eggs, 2 cups almond flour (many sub out about 1/4 coconut flour) 1-2 cups sugar equivalent, and 2 oranges that have been boiled for 2 hours and blended to a pulp. Mix it all up and pour into a springform pan lined with parchment paper and Bake at 350 for an hour. Even DH who eschews all things low carb is crazy about this cake!

That orange cake looks awesome, did you use the almond flour or the coconut flour? do you boil the whole orange with the peel? or peel and seed it first?

I washed the whole oranges well and simmered them whole for 2 hours. Many people have suggested that this longer cooking takes the bitterness out of the peel completely. I cut them in half, then, removed the pits,(which were next to none, since I used naval oranges) and then put them in the food processor and pulverized them and added the rest of the ingredients. Hope that helps! Diana |
