Sexy Egg Salad
8 hard-boiled eggs, peeled and chopped 1 Tbsp vinegar ½ cup chopped red onion ½ cup celery chopped (1 long stalk) ¼ cup red bell pepper, chopped 4 Tbsp chopped green pepper 2 stalks green onion, chopped 2 kosher baby dill pickles, chopped 1 Tbsp mustard 1 cup mayonnaise (or more for moisture/flavor) 1 tsp salt ½ tsp pepper paprika Mix all ingredients save for eggs. Chop eggs and add them to the dish (if you’d like to prepare the dish as pictured, add only four of the eggs to the salad and slice other four eggs open along the length and place round-side down in the bowl). Refrigerate until serving. Add paprika before serving if desired. Keep covered in the refrigerator. Makes about 4 cups, or about 8, 1/2 cup servings. Recipe can be doubled. Barbeque sauce Ingredients 1/2 cup ketchup (Heinz reduced sugar) 2 tablespoons brown sugar (erythritol) 2 tablespoons Worcestershire sauce 1 tablespoon cider vinegar 1 dash hot pepper sauce 1 teaspoon garlic powder 1/4 teaspoon mustard powder 1/4 teaspoon salt Directions 1. In a small saucepan over medium heat, stir together the ketchup, brown sugar, Worcestershire sauce, vinegar, hot pepper sauce, garlic powder, mustard powder, and salt. Bring to a simmer, then remove from heat and allow to cool slightly before brushing on your favorite meat. Beef short ribs Preheat the oven to 300 degrees F. Arrange the short ribs in a 13 by 9-inch baking dish and season with salt and pepper, to taste. Pour the sauce over ribs and toss well, coating all the pieces. Cover with aluminum foil and roast until cooked through and tender, about 3 hours. Remove the foil during the last 30 minutes of cooking to brown the top. Transfer to a serving platter and serve. Captain's Coleslaw Serves: 4 Ingredients 1/2 cup mayonnaise 1/3 cup milk (calorie countdown) 1 teaspoon white vinegar 1/4 cup sugar (Splenda) 1/4 teaspoon salt 1 (16-ounce) package cabbage coleslaw mix (see Options) Instructions 1. In a large bowl, whisk together all ingredients except coleslaw mix; mix until smooth and creamy. 2. Add coleslaw mix and toss until well coated. Cover and chill for at least 1 hour before serving. I baked this in a 9x13 pan for garlic bread. Brushed the tops with melted butter, sprinkle with garlic powder and toast one side, flip over brush with butter and more garlic powder and toast. Almond Butter Bread 1 cup almond butter 3 eggs 1 Tablespoon vinegar 1/2 teaspoon baking soda 1/4 teaspoon salt 1 packet stevia (optional) Blend almond butter and eggs until smooth. Add in remaining ingredients. Pour into a sprayed 8 1/2" by 4 1/2" loaf pan and smooth the top. Bake at 350 degrees for 30-40 minutes. Let cool before slicing. Can also be baked in muffin tins for slider buns. ![]() |

Finally made these. Mine are not as pretty as the pictures, but boy they smell just like a yeast roll and the texture is just right. Now on to trying your other recipes with this mix, loaf of bread and pizza crust!

You can find it on her website, it's called your lighter side, it's in with her pizza recipes.
It's her Easy Gluten Free Pizza Crust. Easy Crispy Pizza Crust 1 packed cup cooked, minced chicken breast 1 cup packed mozzarella, shredded 1 Tbsp parsley, dried 1 tsp basil 1/2 tsp onion powder 1/2 tsp garlic powder 1. Preheat oven to 425 degrees Fahrenheit. 2. Process chicken and cheese together. Mixture will resemble a meal/thick, dense crumb consistency. 3. Press chicken/cheese mixture on parchment paper on a cookie sheet. 4. Top with parsley, basil, onion and garlic powder. 5. Bake for 12 minutes. 6. Let cool for five minutes. 7. Top with sauce, cheese, and then toppings. 8. Bake for 6-8 minutes more, or until toppings are melted. 9. Let cool for five minutes. 10. Slice and serve. Makes an entire 12-14″ pizza. |

hmmmm, interesting to add ground chicken breast. I have made a crust without the chicken and only the cheese, thanks. I have left over chicken too. May have to try this tonight or tomorrow.

Pimento Cheese with Low Carb Crackers
![]() INGREDIENTS 8 ounces sharp cheddar cheese 4 ounces muenster cheese 4 ounces mozzarella cheese 4 ounces swiss cheese 4 ounces monterey jack cheese 4 ounce jar diced pimento, drained 7 ounce container greek yogurt 1/2 cup mayonnaise 2 Tbsp half and half 1/4 tsp salt 1/4 tsp pepper 2 tsp parsley INSTRUCTIONS Shred cheese and place into a large bowl. Add jar of drained pimento, greek yogurt, mayonnaise, spices and half/half (if desired). Mix until well blended. |

I posted the recipe for the chicken pizza crust above because I know "google is my friend" haha Remember in the movie Scarface Al Pacino says "say hello to my little friend" I say that all the time now when someone asks me a question..then I refer them to google.

![]() ALMOND BUTTER COOKIES INGREDIENTS: 2 c. almond flour ½ c. coconut flour 1 T. oat fiber 1 tsp. glucomannan powder (konjac powder) 1/8 tsp. salt ½ tsp. baking soda ½ c. grapeseed oil (or softened butter, if you prefer) 2 T. almond butter 1 T. vanilla extract ½ c. granular Splenda 1 T. erythritol 1 egg, beaten DIRECTIONS: Preheat oven to 350º. Measure out dry ingredients into a large mixing bowl. Beat in the egg and vanilla. In a saucer, blend the almond butter and oil as best you can blend them. Add to batter and stir well to form a smooth dough. Roll into 1″ balls and place them onto parchment lined baking sheet. Leave 1″ space between cookies. Press balls down slightly flat and pop pan into preheated oven. Top with chopped, sliced almonds if desired, but this really doesn’t impact flavor, just the look. Bake for about 7 minutes. Do not overbrown these cookies or texture will be drier and less chewy. Remove from oven and cool on the pan a few minutes before removing with a spatula. These are delicate while hot but “firm up” nicely when they cool. Store in an airtight container. NUTRITIONAL INFO: Makes 28 cookies, each contains: 102.7 calories 9.07 g fat 3.95 g carbs, 2.0 g fiber, 1.95 g NET CARBS 2.54 g protein 48.2 mg sodium 11.75 mg potassium
