Eggs! I have an egg salad that uses up those hard-boiled eggs from Easter, and then a terrific eggs benedict that uses the easiest Hollandaise sauce ever. I absolutely love them both. Both are induction friendly and really filling.

I made this as a fun dessert using the same sponge cake as with the layered Spring cake and Diana's oopsie roll cake. It's only 5 net carbs and makes me want more strawberries.

honeybuns-- I don't like windows, save for the ones on my computer. Here are some breakfast bread sticks. They're perfect for dipping in everything from sunny side up eggs to sugar free syrup. The image is super dark and wonky. Sorry about that. ![]() Here, on the other hand, photographed outside, is an amazing creamy spinach soup that I really love. It's super small. For some reason, my new site template likes smaller pictures that don't enlarge on command. Even my dog (dare I say it) listens better. :P ![]()

Here is a heated artichoke tomato dip I just made and absolutely love. It's my new favorite. Thinned down with some heavy white cream, and you have an amazing, quick alfredo for any main dish.

The recipe is freaky easy. I can PM you the recipe if you can't find it! I was surprised cheese could brown in a crock pot. It's like a mini oven... only more moist.

I resurrected this recipe from years and years ago and forgot how much I loved these!! I was thinking of trying them now with some oat fiber added or whey protein powder in the pastry portion.
![]() Cheese Danish Pastry portion: 3 extra large eggs, separated 1/4 tsp. cream of tartar 2 Tbs granular Splenda, and 2 Tbs xylitol 1 teaspoon cinnamon ˝ tsp almond extract 3 Tbs. sour cream Filling: 8 ounces cream cheese, softened 1 egg yolk 2 Tbs granular Splenda, and 2 Tbs xylitol 1/2 teaspoon lemon extract freshly grated lemon zest to taste Pastry directions: Separate eggs, putting the whites in a large bowl and the yolks in a medium bowl. Beat egg whites and cream of tartar until very stiff. Add sour cream, cinnamon,extract, and sweetener to the yolks and beat well until smooth Gently fold yolk mixture into the whites, using a spatula. Blend well. Place a Silpat on a cookie sheet and spray with cooking release spray. Divide 6 equal mounds of batter to make 6 Danish. Draw a long indent on each mound down the middle and fill with filling.Leave egg mixture on the sides. Fill a ziplock bag with filling and cut off the corner. Pipe the filling into the indent. Bake about 25-35 minutes at 300 until golden brown. Watch closely at the end. Let cool before taking off silpat so filling has time to set. Filling: Microwave cream cheese until soft. Mix in the egg yolk, sweetener, extract, and lemon zest. Fill pastries. There are many versions of this floating around and I don't know who to credit the original recipe to. Sorry, it was long ago.

Yes it was back in the day of Atkins Revolution rolls!! Then lots of modifications came after. I don't remember the carb count, and I don't have Mastercook. Sorry!
