yes, I was trying to get the number of buns down to just a few. My breadmaker just won't handle less than 2/3 c water and a cup and a half of flour, though. I usually make 4 big hamburger buns with that amount, but the hot dog buns needed to be a little bigger, I thought. Glad I only made three, because they were a perfect size!

I did low carbs waaaaaaaaaaaaaaaay back when, even before '87'. I had one book and was at the mercy of what my mother would purchase at the grocery store. Needless to say, it did not last long for me. I am so grateful for these amazing chefs, loads of cookbooks, proliferation of sweeteners and other products, the internet, AND LCF's!!!!

Some years back, I was reading about Hi-Maize resistant corn starch and all of its wonderful properties for use in baking commercial breads and for enhancing the healthful properties of bread. It was not available to the public, so I wrote the Hi-Maize company and asked them for a sample. They generously sent me 3 1-lb canisters of their resistant starches, and I began to experiment. Same thing with poly-d, which was also available only to commercial food producers for a long time. I am so grateful that we can get our hands on these things now. I cannot believe how much healthier the bread that I'm making currently is than the bread I used to make with wheat flour, even whole wheat.

I am forever grateful to Kevinpa, (and to Jena Marie and Scott123), who led the charge, experimenting with developing flour blends that work well, and explaining the chemistry and properties of all of those great ingredients.

Here's my latest dinner: Crockpot lasagna. This recipe is supremely easy and lends itself to leftovers, lunches and low carb love.

WE made this last night, in the oven as we didn't have 3-4 hours for the crock pot. It is amazing. Both of my children DS13 DD10 loved it too. I am eating it right now as a leftover for lunch...I dare say it is even better today!!!!! THanks CLEO

Yeah, Monica! That makes me so happy!! I am so so glad to hear that. You made my whole morning! I loved it cold, too. there's something about a casserole that makes it even better the next day.

I made this for Easter. Low carb, almost sugar free and filled with love. And to boot, everyone in the house loves the heck out of it!:
