Peggy, I would do the same procedure of mixing the water and sugar and yeast first, to proof the yeast, then add oil, salt, and 1 cup flour and stir. First you'll get a thick batter, then dust in the flour slowly, up to 3/4 more cup, stirriing all the while until the dough comes together. From that point, I am not sure how easy it will be to knead the dough because the dough will be very soft. I used to make some whole wheat yeast rolls this way, though, where the trick to making them very light was to keep the dough as light and soft as possible. I'd try oiling my hands and the counter to knead and add as little flour as possible during the kneading. Otherwise a 5-10 minute kneading will probably do the trick. If you make these by hand-kneading let me know how they turn out.

Tilly, I only use the bread machine for the mixing and kneading. I pull it out after 10 minutes of kneading and form the rolls. It's just for convenience. I don't even know what cycle it's on (probably white bread) because I don't let the machine do anything else.

I used some low carb bread crumbs from some buns (see above) that I made a couple of weeks ago. The buns didn't rise well -- dead yeast -- so they just dried out on the counter from neglect. I ran them through the blender and let them sit on the counter a couple of days, and lo and behold they were perfect! Just pure laziness...

![]() One of the things I always want in my fried chicken is a crunchy outer coating like KFC always had, and the baking powder certainly helps provide that. Ingredients 2 pounds chicken breasts 1 1/2 cups Parmesan cheese 1/2 cup coconut flour (omit on Induction) 3 tsp onion powder 1 tsp garlic powder 1 tsp black pepper 1 tsp baking powder 1 tsp salt 1 egg 1/2 cup cream 1/2 cup water Instructions In tupperware container, add Parmesan cheese, coconut flour, onion powder, garlic powder, black pepper, and baking powder. Place lid on container and shake to combine. In a bowl, crack one egg, and add heavy cream and water. Beat together. Remove excess fat off chicken, and slice chicken breast in to 1-inch strips on the bias against the grain of the chicken. Season the chicken with favorite seasoning. In a large container, add 3/4 cup of cheese-flour mixture. Add a handful of chicken. Shake to coat the chicken. Dunk chicken strips in the egg-cream bath, and shake off excess liquid. Return chicken to large container for second breading. Place chicken on a plate, and repeat for remaining chicken. Start oil heating to 375F, preheat oven to 200F, and place chicken in freezer for 5-10 minutes while oil heats. When oil is hot enough, remove chicken from freezer and place roughly a third of the pieces in the oil. Cook chicken for 5 minutes until done. Place chicken on cooking sheet in preheated oven, and repeat cooking process with remaining chicken.

Gracious, Kent, those are beautiful! I was wondering what to do for dinner tonight, and that looks like it!
I am going to fry half of them and try drizzling the other half with some melted butter or oil and baking them, just to see if that works. Then I'll compare the results. Trying to cut down on the calories a bit these days... |

Yes the oven is only to keep them warm while you finish the others. The resting time also helps crunchiness too as any clinging oil will drop off. (My pan had holes in its bottom.)
