Mine turned out too runny. Maybe will cut back to one egg and then still be able to add the sf syrup. Taste was good, soooo easy, and with protein powder, good for me. Or add two scoops pp and just use 2 eggs, I'll play with it.

Wait, Tilly, did you add the sf syrup to the batter? I only added sf pancake syrup on top after I cooked them. When I made them, and all protein powder is different and reacts different, but I put the 2 eggs and baking powder in the bowl first, then mixed in the scoop of PP and mixed well. Then I added a little water until it was the proper consistency. If you do it in that order the batter being runny shouldn't be an issue because you control the moisture.
I'm glad ya liked it, though. It's definatley a great little recipe to play around with and make your own.

Okay, where on earth did you get the macadamia nuts? I have looked high and low for those buggers, and no luck. Someone told me not in season right now. What is the season for them? Love to have a plateful of everything in that picture!!!!

Hi, Tilly! I find macadamias in different places. In some stores, the macs are in the popcorn/nut section of the store. Sometimes they're in the produce area with the nuts and organics, and sometimes they're in the part of the store with the bulk foods. I wish they stayed put in one spot. These particular ones I believe were in the bulk foods section because hubby couldn't spot them in the nut aisle. I find that if there's a super WalMart in the area, that's where prices tend to be most reasonable on nuts.

Ooh. I was wondering what was up. That's great information, Dottie. The nuts I normally buy are Mauna Loa type (less salty), but what hubby brought home are really salty. I almost have to rinse them to eat them!

Low Carb Sausage Cheese Balls ... mmm mmm GOOD!
![]() RECIPE - LOW CARB SAUSAGE CHEESE BALLS 1 roll Owens or Jimmy Dean Regular Sausage 1 roll Owens or Jimmy Dean Spicy Sausage 2 1/4 cups Low Carb Baking Mix (prefer CarbQuik) 2 cups Sharp Cheddar Cheese (grated) In a bowl, combine all ingredients, except water, and knead to solid ball of dough, making sure everything is well incorporated. The dough shouild feel slightly moist to the touch and should hold its shape well. Form into small balls (approximately 1" in diameter) and place on cookie sheet sprayed with cooking spray. Bake at 350 for 25-30 minutes until they are turning slightly brown. Pour off excess grease and let cool completely before removing from cookie sheet or they will tear. Approximately .5 - 1 g of net carb per ball depending on the type of baking mix used.

Re: mac nuts - I have found them at Costco in the past few weeks at a reasonable price. They are the Kirkland brand.
