Low Carb Scotcharoos

This was a combination or tweak of three great recipes -- the peanut butter fudge, chocolate bark, and toasted coconut "crispies." My kids won't leave these in the house more than a couple days.

Kent, the bars look yummy. What size pan did you use for them? I can't tell by the video if that's a 9x13" pan or a smaller size.

If you google "Your Lighter Side Peppermint Cream Puff Minis" you'll go right to the recipe. I used to post recipes here, but I've had so many taken without attribution that I can't do it anymore.

Thanks Jamie. I'll be doing this one again, it was so good, and so easy. Your cream puff looks gorgeous!

Now that is one astonishingly beautiful picture! Your bread is the next bread on my list to make--thanks, Peggy! Diana

The pan was a size smaller. It's 8x11 cake pan. You could also use a 7x7 square to have it a little thicker than mine.

I was also asked for a link to the recipe. Here is the recipe video:

Thanks Diana. I don't use those Worcester "Victorian Violets" plates very often. But for photographing some foods, they're just perfect, as with all things blueberry.

Low carb, sugar free, gluten free thin mints. They're only 1.6 carbs a piece. It really goes to show you can adapt recipes for your needs.

Cleo, could you make your photos smaller next time? THey are extremely huge and the whole picture gets lost in its hugeness... Thanks!
My tip: try 800x800 or 640x240

Easier to eat the screen when they are that big.

Yeah! I figured out how to resize them. *facepalm*

Nigel, are you still juicing? We do it intermittently. Once a day or so.

I usually have a v-8+ every morning, but that's about all the juicing I have done this year, so far. Occasionally, I have 2 glasses, but most days, only one.

That is so cool! I love that. Really, it's amazing that when you find something you like, why not stick with it? I feel the same way.

I tried these cheetos things. A little blah. But sprinking them with powder cheese sounds great. I'm gonna try that.

My guess is the added powdered flavoring is where the bulk of the taste comes from, while the puffy, dried egg whites give you the crunch sensation. ???

I forgot there is a 1/4 cup grated cheese included but still not enough flavor.

I'm going to make them again sprinkled with cheese.

You have to sprinkle with powder or they're essentially mini oopsie roll puffs. One could, foreseeably, add powdered Parmesan to the recipe pre-baking, along with onion and garlic powder (friends have been discussing theis) and see if the flavor profile is a little oomphier. I essentially created the blank slate recipe, but I like the milder flavors.

Tee hee! I tell you what; I had to buy every kind of cookie this year in order to make them as close and true to the original as possible. Someone has to take one for the team. Right?!
