I hope 2010 will be a great year for all of us. Isn't that year number weird? I can hardly believe it! It seems so strange to me to say 2010. Wasn't it 1998 just a little while ago? |

OK....these pics are with my cell phone....but I'm trying. This is the Diet Cola Sloppy Joe recipe......It tastes good...and even better the 2nd day.
1 lb ground white meat turkey....(or if you prefer ground beef) 1/2 medium yellow onion Brown meat and onion until cooked thoroughly then add: 1/2 - 3/4 cup of diet coke 1/2 - 3/4 cup of low sugar or low carb ketchup (use the same amount as the cola) splash of apple cider vinegar couple dashes of worchestershire sauce couple dashes of hot sauce (I use franks) 1 t. of chili powder 1 t. of salt couple dashes of onion powder Bring up to low boil and then turn down to simmer. Simmer and stir periodically until the liquid reduces. I eat it straight from the bowl, but it would also be good on floopsies. Serve with some low carb cole slaw. Quick and Easy meal with great left overs. I have no idea how it freezes, but not sure why it wouldn't. As best I can tell, the only carbs come from the onion and ketchup. Enjoy! chile relleno casserole=another winner!
As promised....my dinner tonight:
chile relleno casserole: (another Linda recipe) 2 7-ounce cans whole green chiles, drained well * 8 ounces pepper-jack cheese, shredded 3 eggs 3/4 cup heavy cream 1/2 teaspoon salt 4 ounces cheddar cheese, shredded Grease an 8x8" baking pan. Slice each chile along one long side and open flat. Arrange half of the chiles in the bottom of the baking pan, skin side down, in a single layer. Top with the pepper-jack cheese. Arrange the remaining chiles over the cheese, skin side up. Beat the eggs, cream and salt well. Pour evenly over the chiles. Top with the cheddar cheese. Bake at 350ş for 35 minutes, until golden brown. Let stand 10 minutes before cutting. Makes 6-9 servings **I added a package of jimmy dean sausage. I felt it needed meat! It was soooo good******* |

I have to do cheap dinner tonight. Unexpected expenses happened this week so I have to STRETCH the money til payday Friday.
Here is what I have on hand (that is low carb): See if you have any suggestions. 1 chicken breast 1 small sirloin steak 1 can of green beans 1 onion Should I just mix it all up and stir fry??? HMMMMMMM |

Here is my throw together dinner with the ingredients from the above post. I haven't tasted it yet. I'll let you know how it was.
I would love some good budget friendly low carb ideas. I have to go to the store tomorrow and I want to get some good, cheap low carb stuff to get me through the week. It is difficult because I eat a lot. My husband does too. He is also low carbing. |

Eating on a budget
Here is my budget dinner. Total cost was around $2.00.
Burgers .50 each = $1.00 Zucchini = .50 Cheese = .14 a slice = .28 Onion = .30 I drank water. Budget will be my theme all week so you won't see anything fancy. |
