Kent, That pie looks really good. Question for you... Are you using Quick Sweet for the sweetner. If so, then 1 cup =24 drops? Thanks. I just got mine, but was unsure of the drops per sweetness. Thanks, Julie,

LEMON COOKIES Candida/Atkins diet friendly
![]() 1 stick of butter 2 whole eggs 1 tsp lemon extract 1 tsp lemon zest 1 tsp vanilla extract 1/2 tsp cinnamon 1/2 tsp nutmeg 1 C erythritol 2 TBS Truvia Mix/whip all the ingredients together. Make sure they are room temperature before you begin. 1 and 1/4 C coconut/almond/hazelnut flour 1/2 tsb cream of tartar 1/2 tsp baking soda 1/2 tsp salt pumpkin seeds Add dry ingredients into the egg mixture. Mix it up and set aside for a few minutes. You can make muffins or cookies or "bread" out of it. Bake at 350 for cca 20 mins (it takes a shorter time if you are in a higher elevation - Colorado, etc.) |

Hi, I used a combination of coconut and almond flours...the rate doesn't matter. Hazelnut flour may be too bitter so go easy on it.
