Fiesta Ranch Powder (Hidden Valley Ranch) 1/3 can of Rotel (use left over Rotel to make Juevos Rancheros) 1-2 T water 4 LC Tortillas 8 oz Mexican shredded cheese Brown ground beef, then add Fiesta Ranch, Rotel and 1-2 T water. Cover and let simmer 10-15 min on Med-Low. Put 1 oz cheese on each tortilla, top with meat, top with 1/2 oz cheese fold one side of tortilla in and top with other 1/2 oz cheese then fold last flap over. Place a vegetable can ontop of the Meximelt so the cheese melts and holds it together (you can skip this, but it holds it together nicely). Enjoy! Hope that helps!

Oh My Gosh, You guys are so gonna help me stay on plan. I am also trying to stick with 20 carbs or less per day for a little while and these recipes are WONDERFUL and look SOOOOO GOOD!!!!! Thank you everybody!

It's very simple...
1 c. LC ketchup 1/3 c. SF honey 1/4 c. soy sauce 2 cloves minced garlic Whisk together and tah-dah! Yummy BBQ sauce. It makes alot, but it keeps well in the fridge in an air tight container for up to a month. So go BBQ something tasty and come back and post what you thought of the sauce and of course pics of your food! ![]() Mindy |

Ok, for this dish I spun off of Linda Sue's ASIAN PORK & CABBAGE SKILLET DINNER and created a Teriyaki stir-fry. OMgosh was this yummy!!!
Mindy's Teriyaki Stirfry (with thanks to Linda Sue) 1 pound ground beef 1 clove garlic, minced 1/4 cup soy sauce 2 T. of SF honey Pinch crushed red pepper 16 ounce bag shredded cabbage with carrots 2 eggs Brown the ground beef with the garlic. Add in the cabbage. Mix together the soy sauce, the honey and the red pepper and pour over cabbage. Stir it all together, cover and cook on medium for 10 minutes. Then push all to the back of the skillet and crack two eggs into pan and scramble, then stir into dish. Then serve and enjoy! |
