Do you like spinach?
I just made the best sauteed spinach!! I heated a little olive oil, then threw in some chopped garlic and 2 pieces of chopped bacon. After the bacon was crisp, I added 3-4 big handfuls of fresh spinach, and just tossed it until the spinach was wilted. Added some salt & pepper, then a dash of lemon juice.
That was my whole lunch!! Very yummy!! |

Delicious!
Another way to cook fresh baby spinach is really visually striking: either arrange or just dump it on a microwave safe plate and cook it briefly. When the leaves cook flat in those positions, it's really beautiful! People will wonder what it is... they might ask "dandelion greens?" Dot with butter or olive oil and salt/pepper. I'm sure crumbled bacon on top would be lovely too. |
