Cheri's CREAMY SOUTHWESTERN TACO SOUP
I made this tonight and I must say it's one of my favorite recipes so far.
I added a dab of sour cream in my bowl and mmmmmm so good ![]() Its getting cold out too so perfect timing for soup. Thanks again LindaSue for all your wonderful recipes!! Linda's Low Carb Menus & Recipes |

I made this, but one of the cans of Rotel was labeled "hot" and hot it is!! Can anyone tell me what I might add to this soup to take away some of the hot/spicy??? It's delicious otherwise...

Becky, there are 2 types of Rotel. The HOT one and the one made with green chilies. The hot is very hot the other one is mild IMO Julie

Made this soup last wekk and it was great. My BF who never wants to eat low carb loved it. I didn't tell him it was lC till after he told me he liked it..

Made this tonight and it was a huge hit with the family. It was very easy and it tasted "Gourmet" as the family said. I didn't change a single thing and won't change anything in the future.
I had some corn tortillas in the fridge. Cut and sprayed them with a little oil, salted and baked them for the kids. Very nice meal. Thank you Cheri and Linda Sue! |

I actually like the HOT one for myself. My family doesn't like it.
Rotel makes a mexican one, which is mild and has lime and cilantro added. It's the perfect heat level for them. Another tip you might not know, but we make the chicken version as well. Just replace the beef with chicken, and use chicken broth. That easy. |

This is one of my absolute favorite recipes, and I too made a pot last night!
I use the original Rotel, and only 1 can instead of 2, since I don't like quite so many tomatoes in there. I think this soup has the best flavor of just about any soup I've ever had. It's delicious!!! Dreamchaser - I use a full box of beef broth, rather than 2 cans, since I like mine to be a little more "soupy." It's just a few ounces more than using 2 cans. |

I really like this soup as well.
Sometimes I use chicken broth or one each of chicken & beef even in the beef recipe. And sometimes I use canned tomatoes and a can or 2 of diced green chilies, especially if I don't have Rotel on hand. I'll have to make sure I always pay close attention when I buy Rotel. I won't want to buy the Mexican style, I don't like cilantro, and not sure I'd like lime in it (don't think I would!). I also don't like it HOT! I have made the mistake of buying the hot before instead or the regular or mild. I like to make the cheese crisps (or cheese crackers, whatever you call them) to go with this. And yes, I like to add a little sour cream to my bowl of soup too! Another cold snap has hit, so it might just very well be the time to make a batch! Mmmmm!!! Thanks Cheri!

I made a half batch this morning. I used canned diced tomatoes & a can of green chilies, and used 1/2 chicken & 1/2 beef broth.
Mmmm good on a chilly day. I have a stick blender, and blended the (softened) cream cheese into the broths, then I also slightly blended the tomatoes. |

I tried this soup today because I wanted something hot and creamy. WoW! So yummy! I used half chicken broth and half beef (cause that's what I had here) and also added about 1 cup of shredded and drained zucchini. It was delish!

Wish I could easily find MSG-free broth. I make my own chicken broth - guess I could sub that? Sounds wonderful!! Especially love the cream cheese in it. That's delightful!
