Baked Beets with Maple Syrup

I was never a big fan of beets- as to me, they conjured up the canned pickled ones I despised...

Then, in the search for something new, I tried this recipe. And wow- it was pretty darn good! I don't claim this will be for everyone- but, with a whole beet being approximately 6 net carbs, it might be worth a try for people looking for variety.

Baked Beets With Maple Syrup

8 beets, greens removed, washed

1/2 cup low carb (or no carb) maple flavored syrup

4 TBSP melted butter

Cinnamon, granulated sugar substitute (I used Truvia), and ground cloves to taste


Bake the beets in a 375 oven for 45-50 minutes. Remove beets from oven and peel and slice them.

Put the beets, butter, syrup, sweetener and spices into a baking dish. Return to the oven for 15 minutes.

Probably going to make it again next week, if I do, I'll take pictures.

I think that beets are a higher carb choice.....BUT, I am striving for balance. I love picked beets w/ hard boiled eggs. Actually I love beets. So, for me...choosing to eat a half a beet or a whole one for 3 or 6 carbs, I am:

1) able to stay within my carbs
2) adding whole foods to my diet as opposed to the carbage that I would normally choose.

I won't have beets every day, but I think it's out of the question to eliminate something that you enjoy out of your diet....it's about not over indulging.

Now before someone points out that I like Little Debbies too and I eliminated them from my diet....there is a big different between indulging in a beet and indulging in Little Debbies...

Beets are LOADED with nutrients, so a few carbs is well worth the nutrition in my book. Not everyone is eating at induction levels and 6 carbs for a whole beet is really not all that much. I love yellow beets and will put them in salads every now and again. YUM!

Roasted beets w/olive oil & salt is easy - and delicious. They ARE full of sugar, and this method carmelizes said sugars nicely. Be sure to save the beet greens, they're great in salads or as a cooked green (basically swiss chard, which is a 'rootless' beet).
