Tweaker Geek that cake is beautiful! Is that the original measurements only baked in 2x8"(?) cake pans? I have my little girls 9th birthday this weekend, this might be just the answer!

mrs munro - thanks, and yes that is the exact recipe as posted by Chicken Lady, I baked in 2 round silicone cake pans. They are 9" x 1.5".
Jen - thank you. Cake decorating is new for me and I'm enjoying it. I always just frosted cakes with a spatula or knife and called it good, but adding borders, stars, leaves etc. gives cakes that "wow" factor and they look so pretty. I just picked up a book on decorating and am playing around with it. |

Ok, finally got around to making this cake tonight. Thanks so much for posting it, Chicken Lady. It tasted wonderful. I don't do fancy like some of you, but the plain cake was greatly appreciated by my hubby. Toss up between this and the carrot cake on which is the new favorite.

Hey, Chicken Lady!
I love your carrot cake so much, I'm going to try the chocolate cake today. (I'm a teacher and we have a snow day today! ) My DD's 21st birthday is Saturday, and I'm going to visit her at her college, since it's too close to finals for her to come home. She LC's due to PCOS, so this cake will be a real treat. Here's a question for you or anyone else who's made this. Do you beat with an electric mixer the way you would for a regular cake, or just mix well by hand the way you would for muffins. I mixed the carrot cake by hand and it was fine, but not sure about this one. Now I just have to decide whether to do a cream cheese frosting, a whipped cream/dry pudding one, or the chocolate one on the cupcakes in my avatar. Guess I should ask DD which she would prefer.

You can mix it with or without the mixer it doesn't make any difference. I like to do it with the mixer but only because I'm lazy and rather have a machine do the work for me.
You will need the mixer for the frosting if you use the cream cheese frosting I posted with the cake. Let us know how it turns out and if your daughter liked it...and tell you daughter I said happy birthday and happy 21. The things I would change if I could go back and do 21 again... Quote:

Oh goodness, just the batter is yummy my cake is in the oven now, can't wait to have it tonight with the frosting.
I have a bag of Almond Meal from Trader Joe's that is 16 oz. so I didn't even measure, I hope it turns out ok. |

This cake looks so good but I was wondering how Jennifer Eloff would make this cake.I like baked items using the Almond Flour but I like more of a white flour texture.Maybe she can post her version of this cake.It looks so good and it is decorated so nice.I really want to try this cake.Just got a new Kitchenaid stand mixer I am dying to try out.

Wonderful cake. A little like HC Wacky Cake. I made a 6" square cake using about 1/3 recipe (1 egg and about 3T sour cream). Finally a yummy chocolate cake. Used the modified buttercream recipe from the white cupcake thread spread in the middle of each piece and I swear it tasted like a gob (whoopie pie). Dee

What a great looking cake! I am going to have to make this one and the carrot cake too. I wish I could buy cakes like this at a bakery. Someone needs to open a low carb bakery.
