I got myself a Krups from Amazon...I will be trying this again soon if I can ever find Organic Whole Grain Popping corn..
I got a bag of Walmart..I know its not the same..but for 3 TBS same Carb count... |

OH MY GOODNESS!!! Cornbread is something I have missed on this WOE. NO LONGER!!! I made half a recipe of this tonight, and got 6 corn muffins that I cooked in my 6-well cast iron muffin pan. I had enough left that I could have made two more, but instead I fried them in a skillet. I ate one of the muffins, and one of the fried ones with my supper of crockpot roastbeef w/Walden Farms BBQ sauce and some homemade slaw. I think that was the best meal I've had since I started this WOE in February.
It's always a temptation to have cornbread when I go to Cracker Barrel....well, from now on, I will just make sure I have some of these on hand, and take one (or two..)with me. In fact, I'm going to have to find a way to keep these in my car to have anywhere I go. Thank you, Thank you, Thank you, The Chicken Lady! You are my HERO!!! Carole |

I made this today. OMG it is sooo good! I didn't use popcorn though. I used corn grits. I also subbed 1 1/2 c. of Kevin's bake mix for that much of the almond meal. (because I already had it made up and wanted to try it out)
Those are the only changes I made. Tomorrow I warm up the ham and bean soup .....just like old times!! |

How many carbs does the 2/3 cup of popcorn meal have? I just groud mine. It says on the bag that for 2T is 26 carbs. regretfully, I was so excited to grind the meal that I forgot to measure the kernels before grinding...

Many thanks for the wonderful recipe. I made a half recipe, used truvia for sweetener and half water half cream for the milk. I ground up the kernels in my blender, worked fine. I whipped up some strawberry "jam" using frozen strawberries and raspberry Torani syrup cooked up in a saucepan. So we had bacon and eggs and cornbread with jam on this snowy morning.My husband loved it! Now, a question. Would other kinds of whole kernel of dried corn work in this recipe? There is an article in a current issue of the Mother Earth News on a variety of red Italian corn that makes wonderful polenta and corn bread. I'd love to try it. No carb count was given in the nutritional analysis, would have to check that out. Thanks again.

Well, it is a great recipe! I also made your almond flour muffins with blueberries last week when our cabin flooded, (we needed some cheering up! ) and they were outstanding. Kept us bailing for hours! |

Wow I am making this asap!!! I also want to let you guys know that they sell ground popcorn meal at www.amishcountrypopcorn.com I don't know the nutritional count though,

I am not sure of the carb difference, but I used corn grits (no grinding!) instead of popcorn ground and the bread was wonderful!
I also use bacon grease instead of oil but that is my taste preference for cornbread. I heat the grease in the cast iron skillet,swirl it around good to coat the sides of the pan, dump it in the bread mixture, then keep the pan hot while mixing the batter. Pour the batter in the hot, oiled pan and stick it in the oven quick. This makes for a nice crunchy crust. Looking on the USDA website it says that 1/3 c. of corn grits has 38 carbs and 2g. fiber if that helps. |

great reciipe. I used baby corn =ground up in my ninja =for the popcorn. It was delish. You can find a can of this in the Chinese food section at Walmart.
I had to defat it because of Barrett's and it was still great. For those trying to lower fat , I used mimiccreme ,less oil with chia gel. It was a bit soft but I cooked it in my convection for 30 mins. That's probably the reason T Y. I've been wanting corn bread for a long time and the ones I tried weren't at all "corny. |

soobee, Sorry. I never saw your post. I used chicken lady's recipe and the only change I made was to process 2/3 cup of baby corn instead of popcorn meal.
I froze the leftover and now I'm going to make this again and see if freezing the extra corn will work. |

Soobee- I have searched for my recipe and can't find it. I apologize. I have gotten so much help from posters like you and now I'm not returning the favor. My last post was my anniversary and I forgot the whole deal because I haven't eaten the leftovers. But tonight I'm eating the frozen bread and will be able to see if it freezes well. Then I'll remake it and will post the recipe.
