Need a little help for dinner

OK.. I've got 4 skinless, boneless chicken breasts, a bag of frozen spinach, pepperjack cheese, phili cream cheese, sour cream and lots of spices. I would like something different and flavorful for my sweety and I. I don't have time to read through the tens of thousands of chicken recipes to see what fits. Can anyone inspire me please?

I love stuffed chicken breasts! The breasts are so soft the fall apart!

Pound the chicken breast out thin, season with salt, pepper and garlic. Mix spinach and cream cheese. Put the cream cheese mixture on the center of the chix breasts and roll up. If you have parm cheese and eggs, you can dip in egg, then parm cheese and cook in oil on the stove, finish in the oven. If not, I would probably just bake in some foil.
Let us know what you come up with!

I'll bet doing a "chicken kiev" thing with the pepperjack cheese would be good too. Prep like Christine said but put a small cube of pepperjack cheese in there, and maybe a dollop of butter and some S&P. Maybe as a side dish you could make a creamed spinach with the cream cheese and sour cream.

ITA with the above. I stuffed chix and dipping in egg then rolling in parm makes them so pretty and yummy. Just use toothpicks to fasten. I usually skip the cooking in oil part and just bake them at 350 for 30 min and they are perfect everytime. You can add bacon or thinly sliced ham with the spinach / cream cheese too if you have it.
