Need a little help for dinner
OK.. I've got 4 skinless, boneless chicken breasts, a bag of frozen spinach, pepperjack cheese, phili cream cheese, sour cream and lots of spices. I would like something different and flavorful for my sweety and I. I don't have time to read through the tens of thousands of chicken recipes to see what fits. Can anyone inspire me please?

Pound the chicken breast out thin, season with salt, pepper and garlic. Mix spinach and cream cheese. Put the cream cheese mixture on the center of the chix breasts and roll up. If you have parm cheese and eggs, you can dip in egg, then parm cheese and cook in oil on the stove, finish in the oven. If not, I would probably just bake in some foil.

I'll bet doing a "chicken kiev" thing with the pepperjack cheese would be good too. Prep like Christine said but put a small cube of pepperjack cheese in there, and maybe a dollop of butter and some S&P. Maybe as a side dish you could make a creamed spinach with the cream cheese and sour cream.
