I am so impressed

I just made these "waffles" that someone told me about, because I bought some ricotta cheese. and they are wonderful, sponge good, a little eggy. but here is the way..

waffle maker or I guess you could use asa pancake

2 eggs
1/4 cup ricotta
1 little package of sweetner
1/2 tsp of baking powder
2 tbsp of ground flaxseed
dash of cinnamon

beat egg first and the add the rest and spray your waffle maker. I was shocked it rose up it was super good with just plain ol butter, even my son was like that is so good.. I am like I never know when we start mixin up stuff how it's gonna be.. Cooking low carb is way more fun that cooking low fat.

I'll have to try this! Sounds very good. Low in sweetner which is great. I've never had riccota cheese, I guess there's no time like starting a new diet to try new foods.

hey there. I bought a big one of that ricotta cheese, it is very good. So on the food question board I asked what the heck do I do with this?? And they gave me a lot of great tips.. and this one is my favorite so far.. It is so good.. taste just like a waffle to me.. (almost).

I make something similar, only using cottage cheese, eggs and sweetener. It makes pretty good pancake-like things, but I might try using the baking powder to give it more fluffiness. I wish I had a waffle maker!

I made one tonight it was very good, tasted just like a pancake and it was light and airy, I just put butter on it but next time I think I will have some berries and whipped cream on it.

by the way I have a 2 thingy waffle maker, so it makes 2.. I might even put then in the toaster over to crisp them up a bit.
