Salads...

I don't know about you but I have a tendancy to go through phases where I eat certain things until I'm so tired of them and move on to something else...and I did that awhile back with Salads.

But now I'm craving them again and wondering if anyone has any Salad or Salad Dressing recipes they want to share.

Its too easy to get stuck in a rut!!

I like the classic salads: Caesar, Cobb, chef, steak & blue cheese, waldorf. Using a variety of greens - like arugula, spinach and cabbage, can add a nice bite. Nuts can be a wonderful substitution for croutons, which I otherwise miss. And when I'm making my own dressing I tend to incorporate fruit; fruity vinegars (balsamic, rasberry, etc.) or the addition of fresh fruit to a vinaigrette can really make an old standby pop.*

My new fav

Avocado Green Goddess Dressing

1/2 ripe avocado
1/2 cup mayo
1/2 cup sour cream
1/2 cup flat leaf parsley
1/4 cup tarragon
1/4 cup chives
1/4 cup green onions green and white part
2 Tablespoons lemon juice
1-2 teaspoons anchovy paste
salt
pepper
garlic clove
cream to thin if necessary

blend in blender thin if necessary can vary herbs
basil, dill, mint would be good too

It stays nice and green is better refrigerated a couple hours

I take my salad toppings sometimes and put it all in butter lettuce leaves

We go through a ton of the Cesar salad kits and a ton of cucumbers, I love cucumber and tomatoes with ranch.

I also like to add pumpkin seeds, sunflower seeds, and sesame seeds to my green salads.

i make a salad from the cafeteria at work....

as for dressing, i use Newman's Caesar with 1 gr per 2 tblspn serving. instead of croutons, i crush a few walnut or pecan halves (minding the quantities) YUMMO!!!

Tonight we're having spinach salad with a few carrot shreds and some red onion slices, and Asian dressing. It's a nice change from a lettuce salad for us.

Here is a post that was started awhile back ------> Salad making help!

In that post is a salad I make a LOT that Dr. Atkins created. It is one of my most favorite salads:

Atkins Cucumber-Avocado Salad With Cumin Dressing

5 min | 5 min prep

SERVES 6

1 teaspoon ground cumin
3 tablespoons fresh lemon juice
1/3 cup olive oil
salt
pepper
6 cups mixed salad greens, washed
1 small avocado, peeled, pitted, and cut into 1-inch cubes
1 tomato, cored, seeded and chopped
1 small cucumber, seeded and diced
2 tablespoons red onions, finely chopped

In a small dry skillet over low heat, toast ground cumin 2 minutes or until fragrant, stirring occasionally. Add lemon juice and whisk well. Add oil in a thin, steady stream, whisking until blended. Add salt and pepper to taste.

In a large salad bowl, combine greens with 1/4 cup dressing; toss to coat. Place on serving plates. Mix avocado, tomato, cucumber, and onion with dressing; toss to coat. Top each portion of greens with avocado mixture.

Serves 6, Each with: 169 Calories, 16.6g Fat, 1.2g Protein, 6.3g Carbs, 2.6g Fiber for 3.7g Net Carbs

feta cheese

Dressing

1/2 cup evoo
1 TBS red wine vinegar
1 tsp salt
1/2 tsp fresh ground black pepper
1 garlic clove minced
juice from half a lemon
OPTIONAL: 1 TBS oregano for Greek Dressing

Or this is another fave: German Salad with pic
