Flax Muffin

Ive been searching and what I come up with just isnt what I remember

anyone have a recipe for a flax muffins?
Not a 'cup in the microwave' recipe but one that makes a batch of them in the oven
I remember doing a glaze over them etc

Linda Sue has a recipe for Cinnamon Flax Muffins on her website and they are delicious. You could certainly make a glaze for them.

This is the recipe that I use. It came from a sticky thread on this site. I have these on hand all the time because I love to have one for breakfast. I freeze them and take out one a day.

SPONGEBOB'S FLAXMEAL MUFFINS (makes 12)

2 cups flax meal (8 oz.)
1 cup nuts, chopped*
½ cup granular Splenda
½ tsp salt
1 tsp. baking powder
1 tsp. baking soda

4 eggs, beaten
1/3 cup oil (I use coconut)
1 T. extract*
½ cup DaVinci sugar-free
syrup, vanilla
zest of an orange (if using that flavor)


*for banana-nut muffins, use walnuts and banana extract
*for orange-pecan muffins, use pecans, orange extract and
the zest of an orange
Can try different flavors of DaVinci syrup and extract. Preheat oven to 350º degrees. Spray or grease 12 muffin cups (or line w/foil cups).
Mix the dry ingredients in a small bowl. In a separate small bowl, mix the
wet ingredients. Pour the dry ingredients into the wet and mix thoroughly.
Pour into muffin cups. Bake for about 20-25 minutes or until muffins are
firm to the touch.
