you can have your pizza and eat it too!

Has anyone discovered the joy of making tortilla pizzas?

I use La Tortilla Factory, the medium low carb ones. Three grams of net carbs each!

I only use a tablespoon of sauce (which is less than one carb if your sauce has 7 net carbs and only a negligible amount of carbs if you use super low carb sauce) with some reduced fat cheese, a pinch of parmesean cheese (I sprinkle it in the sauce) and black pepper, then stick it in the toaster oven.

The result is one very delicious, super low carb pizza and none of the guilt :P

I would estimate it to be 5 grams of carbs with the cheese. I use maybe 2 oz of cheese all together.

The hardest part of low carb was giving up pizza as a whole, so I'm glad that I could find a way to have pizza and not worry about all the starch.

The best part is, the tortillas double as quesedilla tortillas.

Basically, you put cheese (or whatever you want) inside, fold it over, then cook it in the oven or on a skillet. I use a toaster oven because it's more convenient for me. It's delicious and again, no guilt.

I make pizza with those wraps also

sometimes a pepperoni, sometimes left over taco meat, anything can go on the tortilla and become pizza

something else I'd never want to live without - a chocolate shake ...and today, I made my very best one ever. davinci chocolate flavor syrup, crushed ice, lc soy chocolate 1 net carb 'milk', Isopure 2 carb protein powder (choc. flavor) all in my blender cup... came out exactly like a Wendy's Frosty.... ymmmmmmmm

I do nearly the same thing, but I toast the tortilla in a pan. Once it's crispy I melt cheese on it and add guacamole and tomatoes.

the pan is another way to do it, but since I use the "toast" setting, it gets nice and crispy as well.

sometimes I do them like that in the toaster oven. Other times I do cheese as a crust then the rest of the good stuff!

I used to be able to eat whole pizzas... I once had an argument with a doctor over which is cheaper, oatmeal (Quaker Oats was advertising "5 cents per serving"), or employee discount free pizza.

Nowadays I would be more worried about the various fillers/extenders in the meat, but it seems as if the pizza has the potential to be healthier than the oatmeal. We currently have sources for grass-fed beef and free-range pork sausage. The "prepared" pizza sauce (as per the various chain stores I worked for over the 15 year period) has added sugar (and probably HFCS). Organic tomato paste (or even actual tomatoes if in season) is easy to get and add appropriate spices to. The fat content of the cheeses for the pizza stores would actually be changed seasonally for cooking characteristics.

Using tortillas for crust and healthier toppings it should be easy to create a pizza that tastes good and yet isn't bad for you.

Or... Layer sauce and toppings in a casserole type dish, bake, serve with a spoon. After all, the only function the crust really serves is so that you can pick it up with your fingers.

Yeah, so far in my experiments this works best. I've been making a casserole type deep dish low carb pizza and it's pretty great. You don't miss the crunch since it's supposed to be soft.

Lose weight eating pizza on your low carb diet; sounds ridiculous, but it works like a champ!

Tonight I tried a recipe that promised to mimic thin crust and it was disappointing. It was crisp on the edge but soft in the middle and had a strange consistancy.

I haven't found a good sub for "crispy" on low carb yet. The low carb tortillas are the most crispy, but I don't understand how they can have their first ingredients be wheat and still be low carb. Boggles.

another YUMMY thing to make with the lc pita's is nacho's!!! i cut the pita in half and then use a pizza cutter and cut little triangle's and bake for just a few mins and PERFECT chips!! pile on the sour cream, a lil salsa, some cheese and jalepeno's and oooooh my!

haven't had these in about 6 wks or so, but now i'm craving them!

Oh, my goodness on your shea butter reaction...I know this thread is old.......I think this recipe looks awesome - I will try this one for sure - wow! I can have pizza again - been more than two years -

I'm about to make this now. I don't know how much sugar is in my sauce b/c it's leftover. It was the Bertolli in the bag marinara. I also was only able to find the Mission Low Carb whole wheat tortillas with a net carb of 5 I believe. I read the ingredients between those and the white ones and the first ingredient in the white ones was mofied starch or high fructose something or another. I just put them back. I've got some pepperoncini and italian cheese to put on it. I guess I should leave it in the oven for about 10 minutes or so? I've never made these before.

To think that I can have mexican and italian by using these and still lose weight is great! I love the quesadilla idea and also the idea of using them to make chips for maybe a taco salad.

My honey makes one like these. But instead of using pizza sauce she uses thin slices of tomato sprinkled with italian seasoning then all the whatever else ingredients. It's really good! She puts the whole thing in a cast iron skillet on the stove and the tortilla comes out crispy like pizza crust. Sometimes she uses LC flat bread instead of tortillas. Equally delicious.
