What do you do with your ground beef?

Ground beef is a staple at my house but I get bored and need ideas from time to time. I'm just wondering what all everyone does with it?

I make:
Hamburgers
Meatballs
Sloppy No's (Sloppy joe meat)
Taco meat
Stuffed Peppers
Heiny Helper

What all do you do with your ground beef?

Our fave is stuffed burgers. We generally use ground buffalo, but we use ground beef too.

I take a pound of ground meat, divide into 4ths, shape each into a flat patty; on two of the patties, I put a tablespoon each of bacon bits and shredded cheese, or crumbled seasoned goat cheese, or a Laughing Cow seasoned cheese wedge, and sometimes a tablespoon of Ortega diced chiles; top with the other two patties, seal the edges well, flatten out and grill! Man they're good!

HAMBURGER CABBAGE STIR-FRY (Lindasue)

1 pound ground beef
2 cloves garlic, minced
16 ounce bag coleslaw mix *
8 ounces fresh mushrooms, sliced
2 tablespoons soy sauce
1 tablespoon sesame oil
Pinch ginger, optional
Pinch cayenne, optional
Salt and pepper, to taste
2 teaspoons granular Splenda, optional
1 bunch green onions, cut on the bias, about 8 onions or 3 ounces after trimming

In a very large skillet or wok, brown the ground beef with the garlic and a little salt and pepper. Drain the fat, if you like, or just leave it in. Add the cabbage and mushrooms and stir-fry until the cabbage is tender-crisp. Add the remaining ingredients and heat through. Adjust the seasoning to your taste.

Makes 6 servings

Per Serving: 263 Calories; 16g Fat; 22g Protein; 7.5g Carbohydrate; 3g Dietary Fiber; 4.5g Net Carbs



Italian Beef Patties with Balsamic Cream Sauce (Not sure where this came from, the recipe room I think)

1 lb ground round
1 cup freshly grated parmesan cheese
2 egg yolks
Salt & fresh ground pepper
2 tablespoons butter
1/4 onion, thinly sliced
1 tablespoon olive oil
1 tablespoon butter
1/2 cup heavy cream
1 tablespoon balsamic vinegar

In a medium bowl, mix together beef, cheese, egg yolks, salt and pepper and form into 6 patties.

Heat 2 tbls butter in a heavy skillet over medium high heat, brown patties on both sides, reduce heat to medium and cook until juices are pink.

Remove patties and cover with foil.

Add oil, 1 tbls butter and onion to the pan and cook over medium heat until onion is golden brown.

Add cream and vinegar and cook on low 2 minutes.

Pour sauce over patties and serve

Fresh spinach

Brown hamburger with onions and seasonings. Drain (or not). Scramble in some eggs. When the eggs are done, throw in a whole bag of fresh baby spinach. Cook and stir until the spinach is wilted.

My husband loves these both so much that we have one or the other, once every week or so.

I make a stuffed cabbage soup..
Very simple
Brown up 3 pounds ground beef season with salt and pepper (drain most of the grease)
Chop up one head of cabbage... add to browned meat and mix it up really good cook for few minutes to start to soften the cabbage.
Add 2 large cans of tomato sauce. I use contadina brand which is 2 carbs per 1/4 cup.
Simmer for half hour or so until cabbage is tender to your liking.
Eat eat eat!!!
I will dish this up into individual containers and freeze. When I reheat it I usually drain off any extra sauce to reduce the carbs. Sprinkle a little cheese on it.

I love this low carb Mediterranean stuffed bell peppers recipe from RecipeZaar.

Low Carb Mediterranean Stuffed Bell Peppers

Ingredients

* 4-6 bell peppers (depending on size)
* 1 lb extra lean ground turkey or ground chicken or ground beef or ground lamb
* 1 small onion, minced
* 1 tablespoon macadamia nut oil or olive oil
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 2 garlic cloves, minced
* 1/2 teaspoon ground cumin
* 1/2 teaspoon turmeric
* 1 teaspoon cinnamon
* 1/2 teaspoon saffron
* 1 medium ripe tomato, chopped
* 5 ounces plain nonfat yogurt (I like thick Greek yogurt)
* 1 tablespoon fresh lemon juice
* 4 ounces feta cheese, crumbled
* 2 tablespoons grated parmesan cheese

Directions

Cut tops out of the green peppers and remove any seeds or membranes.

Blanch peppers for 5 minutes in salted boiling water, or you may place these in a microwave-safe pan, add 1/4 cup water, cover and cook for 5 minutes on high until softened.

Meanwhile, brown ground meat and onion in oil, add spices.

When meat is almost cooked through, add chopped tomato.

When meat is cooked through, allow to cool slightly then mix in the yogurt and lemon juice.

Place peppers in a baking pan and fill peppers with mixture and top peppers with feta and parmesan cheeses.

Cover baking pan with lid or foil and bake at 350F for about 15 minutes.

Remove lid or foil and cook about 10 minutes more.
