How do you store bacon grease?

Does it need to be refrigerated? Also I have another question, I cook my bacon on my foreman grill, and it seems that some "juice" comes out before the grease does. Should I cook it again to get that out? Hope thats not a stupid question!

When I was growing up there was a small metal canister sitting by the stove that had the word "Grease" stamped into the side. It sat there day after day having drippings added to it as the day to day cooking went by. I'm still alive. I think you will find many others who can attest to this storage method.

My mother also had the aluminum canister (with a strainer at the top) on the stove. She used bacon grease in lots of her cooking and never put it in the fridge. I can't even remember her washing it though I'm sure she did at some point! Bacon grease must not need too much care!!

Sonofabeach I remember that! My grandma had one I wish I could find one - have to keep an eye out at flea markets - and yes we are all still alive too!!!!!!

I just took my own advice. Went on ebay, typed in grease canister.... and there they were!! Bunches of them!

I have one of those sitting on my stove! It says "grease" on the side and has the strainer insert. I bought it at Big Lots years & years ago. I keep my bacon grease in the fridge, but I use my grease can to hold the oil after I fry chicken.

I keep a lidded jar on the stove, but pour about half of my bacon fat (I hate the word "grease") into small mason jars and refrigerate or freeze them. When I want to make something that actually requires fresh bacon fat, I use from the refrigerated jar. The stovetop jar is just for a quick touch in a frying pan or something. It usually gets used up in about a week and I refill it from fresh bacon.

Even so I end up throwing away good bacon fat. Too much for one person to use. Maybe I need a dog....
