Need Low Carb Crock Pot Recipes w/Limited Ingredients

I'm looking for low carb crock pot recipes w/a limited number of ingredients that I can fix quickly in the mornings (or at least prepare the night before). I have evenings where we are running the kids to their activities that interferes w/our LC/healthy cooking plans. I don't want to have to break down and get fast food (which is part of what caused my problem in the first place).

I'm interested in some of these too. The only 2 I do now are Crock Pot Rotisserie Chicken and regular old Pot Roast, adding potatoes and carrots for the boys to the broth once I get home from work for the last hour.

I'd love some new ideas!! Crock pots are a working mothers savior at times!

Carolina BBQ pork
coat pork shoulder with mustard of choice
put pork shoulder in pot with a little onion if you can eat them and 1/2 cup either white or cidar vinegar and cook on low all day.
add 3T tomato paste and a shake of red pepper flakes the last 1/2 hour to make the sauce. if you like it hot add some more flakes or hot sauce with the paste

if you like your sauce sweeter add your sweetner of choice equal to about 1/4 cup of sugar

3 boxes of chicken stock
4 chicken breasts lightly sauteed in olive and garlic
1 bag of frozen green beans
6 cloves roasted garlic
sea salt and pepper to taste

Put on low and walk away!

I use all organic but that's up to you...
A few minutes before serving, add 1/2 pint heavy cream

I usually add 1 tbs. coconut oil and 1 tbs. nutritional yeast (which the chromium content would be excellent for you with your blood sugar problems)

This is my easy go to soup in the winter

I love my crockpot and I dont like to put a lot of ingredients in either. There is a thread in the recipe room thats full of crockpot recipes, I don't have it saved on my laptop, but I'll find it for ya.

Add your favorite Crock Pot Recipe!

Anyways, my favorite staple I've found so far is any kind of meat, chicken, pork, beef (not ground beef it's so nasty in the crockpot) and put half a cup to a cup of salsa and the juice from pickled jalapenos or pepproncinis (sp?). You can either shred it and put in tortillas for the fam and eat it over lettuce or just put it on a plate and add sour cream and cheese.

Soup is also easy. Linda's Low Carb Menus & Recipes - Soup Recipes Linda's site is the best. I made the creamy taco soup the other day and it was awesome (I browned the ground beef and added sausage and browned it before adding to the crockpot, then added the meat, broth, cream cheese, and added some cut up chicken breast for more protein since there are no veggies and let it go on high for about 2 hours just cuz I was ready to eat). You can pretty much make anything in a crockpot you make in the oven or in a pan.

I buy an 8 pound brisket and cut it in half.

Yesterday I put them each in to cook on low for about 18 hours. One I seasoned with Mexican flavors and the other just salt/pepper/onion/garlic. I poured a jar of salsa on the spicy one and a can of cream of celery soup on the other. (I'm not someone who freaks out about miniscule carbs regardless of where they come from.)

Today the non LCer's are eating them with tortilla's/guac/cheese/etc or bread/mashed potatoes and I'm just eating them in a bowl with the juice like soup. You can add any vegetables you like but I'm the only LC'er here so I just do them plain and everybody can add what they like.

The VERY EASIEST thing is to put chicken parts - whatever you like and I think skinless works best, because the skin just gets flabby - in the pot, sprinkle with a little taco seasoning if you feel like it, and dump in a 12 oz. or more jar of your favorite salsa, green or red. Let it cook on low all day. When you get home the house will smell wonderful!

A nice variation on the theme is when the chicken is done, remove it from the pot, then into the remaining sauce, stir a cup of sour cream, OR a jar of Tostitos Salsa con Queso cheese dip stuff. Both are delicious!

One of my favorites is some chicken breasts, chicken broth and an envelope of Hidden Valley Ranch Fiesta dip mix. When the chicken is cooked through, I'll shred it and mix it back in with the seasoned broth. Excellent. If you want, you could add some sour cream or some cream cheese to make a creamy version.

Char, I'm going to try your recipe - that just sounds awesome!!

I often use our slow cookers to make soups and stews, especially as the cooler weather moves in. And like the others, I make chicken in them. One of my favorites is cheesy chicken. I brown the pieces in a skillet and drain them well then put them in the slow cooker. I add a can of cream of chicken and mushroom soup (since it's lower in carbs than the other cream ofs) or put in the homemade equivalent, add a hand full of sliced mushrooms and maybe some onion, green pepper, and garlic and cook it on low for a few hours. When it's time to eat, I just top each serving with a little shredded cheese. It's so good and creamy and boneless chicken turns out beautifully this way!

This chicken crockpot recipe is EXCELLENT and could not be easier:

1 pkg boneless chicken breasts (you could sub thighs if you like them to save $$)
1 jar pepperoncini peppers
1 pk dry ranch dressing mix

Okay, all you have to do is put your chicken in the pot, pour the jar of peppers with the juice over and then sprinkle the ranch on top, cover and cook on low for 6-7 hours or on high for 4-5. It is SO yummy and totally LC!

I was skeptical about trying this because I don't like pepperoncini. But, after it cooks with the chicken and ranch, it gives it a smoky flavor. It SMELLS SO GOOD you won't have a hard time trying it!

Everything sounds so good!!! I'm going shopping, I need a new crockpot I have worn out mine.

Enchilada crockpot casserole

Make a flat omelet with a few eggs let cool cut in small tortilla shaped pieces layer in crockpot with leftover shredded chicken, cheddar cheese and or pepper jack, sour cream, enchilada sauce or salsa green or red, jalapenos,onions and olives if you like, if it is dry some chicken broth cook on high 4 hours or low all day.

I was going to try this, but couldn't find the pork shoulder at Krogers. Is there another cut of meat you can use? What about pork tenderloin? It was on sale.

tenderlions is a very tender cut of meat and doesn't need a crock pot. they have pork loins on sale but you might need a fat for them and if they are the moist and tender stuff you will need to watch the sodium content.

Pork butt, picnic, Boston Butt will all work any large fatty hunck of pork. you could also do ribs if you make a cut so you could fit the ribs into the pot.

I'm going to be so very very British here but have you ever heard of Lancashire Hotpot!??

Obviously you'll have to make substitutions for the potatoes and carrots that would often go in it but essentially the ingredients that i use are;

neck of lamb
lambs kidney
leek
onion
swede (not sure what the american name is?!)
garlic
stock
worcester sauce

So easy, just brown the meat then add the rest, cover with stock and season. Leave to cook low heat for 3 hours or so.

On a cold day, it's so lovely.

DH found the pork at HEB. The slab of meat he bought is enourmous. We cut it in half and put one half in the freezer. I'm going to try the Carolina BBQ and the roast this week. Keep 'em comin'.

It's odd that's lamb's neck nor lamb kidneys are easily found here. Perfectly good meat, but I don't know what American butchers do with them.

My favorites are just boneless chicken breast, one can cream of broccoli, one can cream of chicken and bag of frozen broccoli.
another is chicken breasts (boneless), can of cheddar soup, can of cream chicken soup, bag of frozen beans. The chicken's so tender after 4 hrs on high. No need to add any water.

Crockpot Carnitas

Rub a pork roast with cumin, coriander, s&p, oregano then sear on all sides and put in crock pot. Then I pour a can of Rotel over the top, add chopped onion, a few cloves of chopped garlic and a couple chopped jalapenos. When I get home from work, I shred it up and turn the crock pot down to keep warm. DH has his with corn tortillas and I have mine over cabbage/lettuce mix. I serve it with cilantro, sour cream, red onion. It is delish.

You can get everything done and into the ceramic pot the night before then just place it in the fridge. In the morning pull it out and put it into the metal heating base of the crock pot, plug it in, turn it on and go.

Green Chili (soup)...
Pork Roast or pork chops cut into 3/4'' to 1'' cubes (browned in fry pan), chicken stock, can of Rotel tomatoes, half jar 505 green chilis (medium or hot), small onion chopped, 2-3 cloves chopped garlic. Start in morning and simmer all day...I adjust the broth toward mid-afternoon to turn it into soup rather than just a gruel.

Since I am German, my mom passed this on to me:

Kraut - n - ribs

First, I add 1/4 cup water to bottom of cooker, then line the bottom with a layer of kraut, then add a layer of meat, then a layer of kraut, layer of meat and then one final top layer of kraut. I also cut a few cubes of butter and stick them into the first layer, so it all mets down to the bottom. I also spice the meat with fresh garlic, olive oil, salt and pepper. I set it at 250 and in 3 hours its done! For the family, I'll take a few whole red potatos and wedge into the top layer also.

A friend gave me this wonderful recipe that I make often:

Hawaiian Pulled Pork

Take a pork roast, shoulder or butt
Add liquid smoke, just enough to coat the meat
Pat coarse sea salt on the meat.

Cook on low overnight. When it's ready, you can pull the meat apart and remove the fat and gristle, or keep it all together. It's good with veggies, on sandwiches or over rice (for the non lc'ers), or just on it's own.

I do briskets a lot too, but I tend to do them in the oven overnight at about 250. Nothing like waking up to the smell of freshly cooked brisket!

My very lazy beef stew

Stewing steak or diced beef.
Chopped onion (red onion is lower carb and stronger tasting so you use less. Chop it up the night before for quickness.)
Chopped garlic (I use this prechopped stuff from a jar. I said this was a lazy recipe. )
A beef bullion cube in just a litte hot water to make it dissolve. Maybe a cup's worth. The rest of the liquid will come from the meat.
Any spices or herbs you fancy.

Preferably sear the beef and saute the onions first. But if you have no time you can just sling everything in and leave it on low all day. I do it for about 10 hours, but your crock may vary. If the sauce is too thin and I want a bit of "gravy" (I think it's technicaly called jus) I reduce it in a pan later. Serve with whatever veggies you fancy.

I do a brisket in the crockpot pretty much every weekend. Serves me for several dinners that!

Had this huge bit of pork shoulder a little while back. It was on sale at half price, how could I resist? It only just fit in, but I got about ten meals out of it! I love my crockpot.
