Eating quinoa hasn't affected my weight one way or the other, but I AM in maintenance - DH loses on it pretty well though.
Last night I wanted BettyR's Amazing Waffles for dinner, but was short by 6 oz. of the amount of cream cheese called for - I added about 1/3 cup sour cream (all I had left of THAT too!) and a cup of quinoa - boy those were some TASTY waffles, crispier than the original recipe too - will have to actually do that on purpose next time and make careful note of my amounts to post! |

Hi all. I tried quinoa a few months back. I can't recall exactly what recipe I used but I didn't care for it at all.
I want to like it because it's supposed to be diabetes-friendly. So, I decided to give it another try today. I bought the pre-washed quinoa at Costco (as mentioned in this thread). I used this recipe below - a friend had given it to me. I'm so happy I tried it because I really liked it! It hit the "oatmeal spot"!Here's the original recipe without my changes: Warm and Nutty Cinnamon Quinoa (Servings: 4) Ingredients * 1 cup 1% low fat milk * 1 cup water * 1 cup quinoa * 2 cups fresh blackberries * 1/2 teaspoon ground cinnamon * 1/3 cup chopped pecans, toasted * 4 teaspoons agave nectar Directions 1. Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blackberries and cinnamon; transfer to four bowls and top with pecans. Drizzle 1 teaspoon agave nectar over each serving. * While the quinoa cooks, roast the pecans in a 350 degree toaster oven for 5 - 6 minutes or in a dry skillet over medium heat for about 3 minutes. My notes/changes: For the liquid, I used 1/2 water, 1/2 cream (to keep carbs down). Used frozen blueberries instead (after defrosting in microwave). Did not toast pecans. Used 2 packets of splenda. Maybe a little too sweet. Thanks all for this thread - I'm going to visit it often for new ideas and recipes. |

I was out of town this weekend and had a toasted quinoa salad at an Inn with butter lettuce and it was great. They toasted the quinoa before cooking it, tossed it with some kind of olive oil based dressing, then shaped little quinoa triangles on the plate. Toasting it gave it a nice roasty flavor.

I made lamb shanks in the pressure cooker the other night, they morphed into an Indian-flavored dish - I had bought a bag of Trader Joe's frozen quinoa with cubes of sweet potato and zucchini so we had that with - boy it was tasty!
As for the quinoa itself, I hope Costco never quits carrying the brand they have, because it is so good and already thoroughly washed - no bitterness remains. Angie, that sounds amazing! |

I never thought to toast the quinoa first, it really added something to it. Wish they would have given me the actual recipe though!

Hi Ann! Well, I only had 2 oz. of cream cheese instead of the called-for 8, so used that plus about 1/3 cup sour cream, and then the 1 cup quinoa - it still made a nice scoopable batter (I use my smallest ice cream scoop to portion it properly) and the waffles were better than ever.

Charski, I went to Costco to buy some quinoa, and found the 4lb bad for $9.99. But reading my directions, it doesn't sound like it is pre-rinsed. I am wondering if yours is the same, if yours does say rinsed on the package....or if Costco just happens to carry a different brand? Then darn!

Mine is in a green bag, the brand is "TruRoots" - it says "organic" at the top of the bag and in smallish letters underneath and to the left of that it does say "prewashed" - is your brand the same?

I buy the Ancient Harvest brand stuff at Whole Foods, but just the pasta and the quinoa flakes (neither of which I've tried yet....) Well I hope it's good, sounds like you need to really rinse it well though before using! We just had some tonight with Butter Chicken - oh man it was sooooo good! |

I made my DH go out and buy a rice cooker for the quinoa. We havne't tried this brand yet....but we are loving the quinoa! I just LOVE that texture!
And thanks to you....though my DH doesn't like you right now....i MAY be getting a Vitamix fairly soon! ![]() Yes, I have been reading threads over this past weekend. |

My Costco has the Ancient Harvest brand, too. I was looking forward to not having to rinse it. Oh, well, I guess it's not that big of a deal. Maybe it depends on where you live as to which brand Costco carries.

DH requested these meatballs for dinner again, making them tonight. I tried quinoa flour as a thickener for gravy (per Fawn's comments) and it worked wonderfully!!! Thanks Fawn for the gravy idea and thanks Charski for this yummy recipe! I use all zucchini (no carrot) and DH doesn't even bat an eye (he's a proclaimed zuke hater).

They are so good! I thought the gravy might taste too grassy from the quinoa flour but you can't even taste it. It does act a bit different than regular flour, it takes a while for it to thicken but it will (I just let it simmer until it was thick). I did make a roux with it first.

Thanks everyone for all the great ideas and recipes for quinoa. I haven't gotten really creative with it yet, but I've enjoyed it in place of rice with stir fry and also used it in stuffed peppers.
I bought some quinoa flour today. There's a recipe on the bag for Sour Cream Fudge Cupcakes. Wondering if anyone has tried this or any type of baked goods using this flour? Except for the cup of sugar, which is easy enough to replace, the recipe is all low carb so I think I might give it a try......unless of course there is anyone who has had some disasterous results they want to share! ![]() |

Char, I just wanted to let you know that I finally found Quinoa today - it's white quinoa apparently and pre-washed.
By the way did you use quinoa flour for the waffles you made (sounds amazing!) or this funny granular type stuff I just bought? |

Jen, I used the whole seed, cooked up - 1 cup quinoa to 2 cups water with a few grinds of sea salt, I do mine in an 8 cup Pyrex batter bowl in the microwave. I do 5 minutes on High, then about 10 to 12 on 50% power. Stir at the 5 minute mark, let cook on 50%, then let stand about 5 more minutes. Fluff and you're ready to eat it or make waffles!
