I just bought some this past weekend after seeing a recipe on Pinterest for a sweet potatoe, chicken dish but for the life of me, I cant find that darned recipe again.

I've made sushi with quinoa twice now, and had no problems with it. I use about 3/4 cup in place of rice and fill with avocado, strips of cucumber, and tiny slivers of carrot. then I cut the roll into 8 pieces and eat 4.

I just made my second batch of pickled ginger tonight and wow! It is so much better than anything I've found at the store, even the Asian markets.

I'll approximate what I did:
  • Peel a couple of large knobs of ginger
  • use your vegetable peeler to make paper thin slices of the ginger until you have about 2 cups, loosely filled
  • boil 1 1/2 cups water with 1/2 tsp salt
  • plunge the ginger into the boiling water and turn off the burner and let it sit for a few minutes (3-5 minutes)
  • meanwhile mix up 1/2 cup rice vinegar and 1 1/2 tbs equivalent sweetener (I used Ideal and added a couple of drops of SweetzFree to boost the sweetness a little)
  • boil the vinegar/sweetener combo to dissolve the sweetener
  • drain and pack the ginger into a clean pint jar, saving the ginger water
  • pour the sweetener/vinegar mixture over the ginger and add about 1/4 cup of the salted ginger water.
That's it! You can eat it within a couple of hours, but it gets better and better over the next week. I think this will keep in the fridge for a long time, but it never has a chance around here. I used some of the rest of the ginger water to cook carrots in for dinner. Added a little butter, and yum, glazed ginger carrots!

I've been interested in quinoa for a while now... finally tried it at a restarant just the other day. It was Quinoa Power Bowl, with kale, shredded carrots, grilled chicken, tomatos, lemon, parmesean, creamed pesto sauce. It was delish!!! Now I'm hooked, going to pick some up tomorrow and let the quinoa dishes begin!!! MMM, stuffed peppers, meatloaf (instead of breadcrumbs) stirfry, oh the possibilities are endless!! And pinterest is loaded with recipes~
