Thank you, Charski. So am I. I was a little worried last night when my 2-hour reading was higher than the first. So, I'm glad I can work it like this, as a rice or pasta substitute. It's so nasty here today, I just may make a meatloaf and fauxtatoe dinner. We need something hot and comforting with all this rain.

We never (well, RARELY ever) get ANY rain between about May 15 and October 15, more or less - so any water my garden gets comes out the end of the garden hose. And being in a near-constant state of drought - that isn't a cheap proposition here!
Our summer was so sucky weather-wise that my garden was the worst it's ever been. I DID have luck with bulbing onions, SOME lettuce, and now the kale and collards are doing great - but the radishes, squash, and the poor tomatoes all pretty much gave it up. SAD. |

Somewhere I saw a recipe for a butternut squash pilaf and thought it would be really good with quinoa.... |

Thank you all for a great thread! I made quinoa tonight for my butter chicken, and it was lovely! I think I'll try it for a breakfast cereal tomorrow, y'all had some great recipes. Does anyone happen to have a tabouli recipe for quinoa? It tastes like it would work great. Also, I think I might try it in a Kebbe recipe. I'll post it if it works. ~Holly

Dirty Rice? Help!
I was at the grocery store this evening and came across a "DIRTY RICE" boxed mix and it got me thinking about Shoney's breakast buffet - many moons ago, my friend and I used to go almost every weekend (ahhhh, memories of the only comfortable outfit I could find was sweats)...Oh, back to today and my "skinny jeans"!

I wonder if that packaged mix has a separate envelope with the seasonings in it? If it did, you could just ditch the rice and use the seasoning packet!
Otherwise, I found some recipes online by googling, but there were mixed reviews.... |

That was the first thing I looked for. I'm all about season packages...my husband keeps telling me that I need to go into business selling all the package mixes in bulk.
I always buy the boxed pasta, pull the packet, throw the pasta away and use Dreamfields - it just steams my hubby - I'm always hearing "What a waste, throwing all that stuff away!" I tell him "Yes it is... my hind-end has just 'wasted' away without it! ![]() I think I'm gonna have to give this dirty rice thing a try! ![]() |

I KNOW this thread is old but it just goes to show you how long I can keep something bookmarked!
Anywho, I JUST made my first batch of quinoa and oh-my-goodness, it is slap your mama good!! I cooked it, according to most basic recipes on this thread, then stirred in butter, cream, garlic, sea salt, pepper and a mix of fresh Parmasean/Romano/Asiago cheeses and I almost passed out with this first bite!! Ten years into this WOL and, most days, I still eat at induction or OWL levels but, on the days when I eat higher glycemic fruits and veggies (sweet potatoes, grapes...no bread, flour, rice, pasta or real sugar ever passes my lips), I still keep my eye out for any signs that my body can't handle a new food and I'll do the same with this! Hopefully, if Sweet Lil Baby Jesus is listening, quinoa and my body will get along well because I'm simply dreaming of recipes for this wonderful little SEED (not grain)!! ![]() ![]()

I used to eat quinoa all the time before low carb and loved it, maybe I should try adding it back to diet like once a week or so. We would make big batches in rice cooker and then use it in lots of ways thru the week.
My favorite thing to do was make burritos with it, I guess i could find some low carb wraps... i added refried beans, all the veggies, cheese and taco sauce. Just using a small amount of refrieds and quinoa and finding a low carb sauce would probably make this do-able again |

Awww, I've got to get some more--had some in my pantry forever and didn't use it because of its high carb count. Yesterday while cleaning out my pantry, I found it was full of little moths and their tiny worms, ewwww. Threw out the whole bag. I'll get some tomorrow at the health food store and make stuffed peppers with it and take my bs readings afterwards. Hope it works!

There's about 20 carbs per 1/2 cup of quinoa. As long as my bs is running between 70 and 90 I can get away with that many carbs. I should get some quinoa to have once in a while. I love all these recipes and tips!!
