I cooked the quinoa flakes this morning and had some as hot cereal with spice, sweetfreez, and h&h.. I do get the 'grass' flavor faintly, but it was good.
I also had half a cup or so of a restaurant quinoa salad last night, and for those who are wondering if it kicks you out of ketosis, my sticks were just as dark this morning as they have been. I started back on LC 3 weeks or so ago, so I'm really paying attention to things to start with. YMMV of course. =) |

I tried quinoa as a rice type dish...kind of like stir fried rice. It tasted great but it did horrible things to my blood sugar. Bye Bye quinoa for me!

Terry: I had about 3/4 cup. I tried less the next day and still a huge spike for me. I am very carb sensitive and spike when I eat more than a few ounces of protein (even with a lot of fat) at each meal.

*SUBBING* Wow, quite a thread! I make quinoa routinely for the family as I was so impressed with it being a complete protein. I didnt eat any cause of the carb count! But Im going to give it a go today and see what it does for my blood sugars!
The recipe I make is Cold Quinoa Salad, Cook and cool the Quinoa, and then add all the stuff you would normally add to macaroni salad. MAyo, italian spices, cucumbers, green peppers, onions, cubed cheese, cubed salami, etc. |

I bought some quinoa yesterday at Sprouts from the bulk bin. It didn't say washed or not, so assuming it is not, how long do I rinse? I am going to try a sample batch, fingers crossed we like it, it sounds like it has so many possibilities.

Put it in a fine-mesh sieve and let the water run through it, stirring it around with your fingers or a spoon, for a minute or two, then shake, and rinse again.
I've read some folks soak it for a while first to loosen up the saponins, then rinse well.... I'm fortunate that the stuff I buy has already had all that done to it! ![]() Hope you like it! |

I want to say thank you for starting this thread, I would never have tried this stuff. I rinsed under cool water for a few minutes, then cooked in the microwave. When I was a kid my mom used to cook minute rice, and we would have it with milk and sugar, I thought it was the best treat! I added some cream and a couple drops of Sweetzfree, and it tasted remarkably like that! We are having chicken and quinoa for dinner tonight! Thanks again, christyjo |

Ah! Gotcha. I'm not well-versed enough with insulin-dependent diabetes to make any suggestions, other than, did you eat it by itself, or as part of a meal with plenty of protein?
It just may be something that doesn't work for you, there seem to be a few folks for whom that is true. Bummer! |

Here is another recipe Ive tried for my family:
QUINOA PILAF 6 cups cooked quinoa, 1/4 cup green onion, diced 1/4 cup olive oil 1/4 cup celery, diced 2 cloves garlic, crushed 1/4 cup green pepper, diced 1 cup slivered almonds 1/4 cup sweet red pepper, diced 1/4 tsp oregano salt & or pepper to taste Saute chopped vegetables in olive oil until clear, yet crisp: stir in oregano. Add sauteed vegetables to cooked, hot quinoa, mixing well. Add salt to taste. Dry-roast almonds in heavy skillet until lightly golden. Add almonds and mix. Serves 8. Good with chicken!

Jumping on the quinoa train...bought some this afternoon at Costco. Serving it with black beans, sauteed garlic spinach, feta and black olives. Hopefully, it's kind to my blood sugar. I'll find out

I had planned on using it for cereal in the morning but after my 2nd reading tonight, decided to have bacon and eggs, and a little butter on it, instead. We shall see. I would love to use the quinoa like rice, hot cereal, and bulgur.
