Turkey Breakfast Sausage Patties
I just tried this recipe from RecipeZaar (posted by Picholine) and they were quite good. I used free range ground turkey leg meat (not breast). It has a slight different taste and texture than pork sausage, but I like that it contains no hidden ingredients and these taste 100 times better than premade turkey sausage. They taste best if you let the mix sit overnight. These are a bit spicy, so just beware if you are sensative (I used a 1/4 less cayenne because of the reviews, but the next batch I'll use the measurements below).
Turkey Breakfast Sausage Patties SERVES 4 -6 Ingredients 1 lb ground turkey (I used dark meat) 1 teaspoon salt (I used kosher) 2 teaspoons sage 1 teaspoon fennel seed (I may grind these up a bit next time) 1 teaspoon thyme 1 teaspoon black pepper 1/2 teaspoon white pepper 1/2 teaspoon cayenne (I used 1/4 but will use 1/2 next time - I like spicy) 1/4 teaspoon garlic powder 1/8 teaspoon ground cloves (I didn't add these, but may next time) 1/8 teaspoon nutmeg 1/8 teaspoon allspice Directions 1. Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well. 2. If time permits, refrigerate overnight to let the meat absorb the flavor of the spices. 3. Form into patties and cook as needed, freezing leftovers. 4. Don't overcook or they will dry out--remove from the heat as soon as they're no longer pink inside, but still juicy. (if you prefer a moister texture, you add a splash of olive oil or an egg to the mixture just prior to cooking) Angie's comments: I added 1 TBS of rice bran oil to this mixture and mixed everything up in my kitchenaid. Rolled it into a log and wrapped in parchment and refrigerated overnight. I fried these on medium heat in more rice bran oil. |
