Fudgey Peanut Butter Coconut Squares (Pic incl)
FUDGEY PEANUT BUTTER COCONUT SQUARES These sweet fudge-like squares are very rich but quite low in carbs. They may be frozen or refrigerated. I prefer them frozen, but if using chocolate chips, they would be better refrigerated, as the chips would freeze too hard and one would not taste them so well. 1/3 cup granulated erythritol 1/4 cup whipping cream or evaporated milk 1 Splenda Quick Pack or equivalent to taste (1 Splenda Quick Pack = 1 cup Splenda Granular) 1/2 cup butter 1/2 cup smooth peanut butter (sugar free, salted is fine) 1 1/2 cups unsweetened, medium dessicated coconut 1 cup vanilla whey protein powder 1/3 cup chopped walnuts or pecans 1/2 cup sugar free chocolate chips, OR 70% Lindt Bar, chopped (optional) In double boiler or in heavy-bottomed saucepan, combine erythritol, cream, Splenda and butter. Over medium heat, stir mixture until very hot and erythritol has dissolved. Stir in peanut butter until incorporated. Then add coconut, vanilla whey protein powder, chopped nuts of choice and chocolate chips, if using. Stir well and turn out into an 8 x 8-inch square glass dish. Freeze and later when set, refrigerate, if desired. Nutritional Analysis: 25 squares, 1 square: (analysis with Splenda Quick Pack - liquid Splenda would also work here) 131.5 calories; 4.0 g protein; 11.7 g fat; 1.7 g carbs An aside - a credit to Kevin: It was that time of the month and Kevin's delicious-looking "No Bake Chocolate Cookies" beckoned, but I try to avoid chocolate at those times because of the risk of migraines - so this recipe was inspired as a result of his creation. I just realized there is a small possibility that I left something out of this recipe. I hope not!! My recipe scribbled on a scrap piece of paper was mysteriously missing off my desk this morning. I wrote this recipe out by memory and by looking at Kevin's recipe again (If I loved a recipe, I can usually remember it for a while - my memory is not always that great, but somehow for recipes, it's pretty good). I am almost 100% sure it is correct, however. I may have added a 1/2 tsp of vanilla as well, but I cannot remember that part.

Wow, Char, I think almond butter would make the coconut flavor stand out even more perhaps - could be really tasty and more caramel-like in flavor. This almost had a caramel flavor to it because the peanut butter was not so overpowering actually - very mild. I hope you have time to try it.

P.S.
I put the squares on a plate on a Christmas napkin, because I think it would make a great addition around Christmas time, when everyone is indulging in sweet treats. This could be one of our sweet treats and we would not feel deprived.

These look great! What exactly does the protein powder do for the recipe? Any ideas what I could sub for it? I don't like pp and actually try to keep my protein somewhat lower. TIA

Carolyn, let me know if it turned out okay. I did reduce the sweetener (on paper/computer screen, if you know what I mean) from the first time I made it, as it was a tad too sweet. Hope it was sweet enough now? Hope I got the recipe down correctly. Let me know if there were any problems - I may have to make it again.
Teresa, in this case the whey protein powder forms a substantial part of the dry ingredients, adding to the body and texture (chewy and fudge-like) - subbing something else will make a different recipe entirely. I'm sorry. You could do a search for my Peanut Chocolate Fudge, which is a pretty good fudge that does not use whey protein powder. Lauren, sorry about the peanut butter control issues. I love peanut butter too, however, I can't eat much at a time - maybe two teaspoons maximum - really satiates my appetite, so good diet food for me. Thanks for your kind words - high praise coming from such a great photographer such as yourself! Actually, my husband is a fantastic photographer too, and he took the pic. He is always buying new cameras. Thankfully, as cars, for instance, would be a bit more expensive. I should learn to take better photos, but I'm terribly lazy about adding anything else to my list of things to do, especially when I can defer to the guys in the house, who are already very good at it. Aptos Gal, I think somebody in your part of the world may be able to help out with the question about where to buy your unsweetened coconut. I would assume that a place like Trader Joe's would have it. It is true that it is less available than the sweetened kind. It's too bad. Hope you can find it soon. It's useful to have in your pantry or freezer (when opened). |

Hmm, I just made this again this morning. Yummy, and the recipe is just fine as written, however, I think I would go back to my original recipe where I used 1/2 cup of granulated erythritol - just because I like my candy real sweet (this did not change the carb count significantly being spread over 25 pieces - point something). If you do start out with 1/2 cup erythritol, then do a taste test before adding any more sweetener. It depends also on the saltiness level of your butter and peanut butter as to how much sweetener will be needed to balance that. I don't like the saltiness to outweigh the sweetness, but I do love mixing salty and sweet. |

This is soooooooooooooooo good..I didn't add as much coconut, but added more pecans. This is a very flexible recipe and extremely rich. I just squirted in some liquid Splenda and tasted it. Love it..It's going to be a real standby at my house.
Honestly, you don't need much of this...an inch square will satisfy very easily. |

Glad you liked the confection, Carolyn. Thanks for trying out the recipe and happy it's a keeper for your family. I like that it is so quick and easy to prepare. I was wondering, I used chopped, California walnuts and they stay crisp. What happens to the pecans? Do they get soft or not? Curious me.

Jennifer......I don't have any granulated erythritol, so could I just add more Splenda? I have Splenda quick packs. I've been looking around to buy some erythritol, but haven't found it in a store yet. To be honest, it sort of confuses me. Some recipes call for it in powdered forms and some, if I'm not mistaken, call for just regular erythritol. Anyway, right now I don't have any.
I hate to make the whole batch and not have it turn out. I believe the erythritol is for sweetness....correct? So can't I just add more Splenda? And if so, how much? I really love your recipes and appreciate you experimenting for us so that we can make yummy things that help to keep us on plan. Thank you very much!!

On the pecans, they were little pieces..I didn't notice if they were soft or not..I did have some walnuts, so next time it's walnuts..

Tryinghardtolose, I think you could use Splenda Quick packs - probably 1 and a half packs, but go with a little less first and do a taste test. You don't want to get an aftertaste of Splenda. I get my erythritol from Netrition. I have both the granular and the powdered. I tend to prefer the powdered, but there are uses for the granular, like in this recipe. The synergy afforded by using the two sweeteners is so much nicer than using only one. Although for my cookbooks, I only ever used Splenda, for the sake of convenience for others, as Splenda is more widely available.

The erythritol affords some body to the confection, so I'm thinking either add a couple of extra tablespoons of whey protein to offset that, or reduce the whipping cream to 2 tbsp. You may have to keep it in the freezer, depending on how well it sets up. Have fun! |

Ok...I made this yesterday but I used Chocolate whey protein powder in them..I cant quit eating them!! They are wonderful! I did make mine into bite size squares so i can munch all day on them.
Do you think these can sit out of the fridge after you get them set up? I might make the vanilla ones today. This is one candy that will be on my LC Christmas Candy list. TY Jennifer! |
