Jennifer, what brand of coconut do you buy? yours looks so much nicer - like the thick sweetened coconut compared to the one i buy!

I really can't say at the moment what brand I used. I have not made this in ages, nor bought coconut in ages. We live in the land of coconuts. lol Maybe we get different coconut here. I bought mine at a kosher store here in South America. One can get different grinds - some coarse, some finer.

I buy Kroger's brand of unsweetened coconut. Since the shreds are fairly large, I pulse it in my food processor until it's the right consistency.

great idea Pam!! We can get either big shavings or fine shreds!! I love this stuff - I make it in the microwave now!!! So quick and easy and good!!

I also made this in the microwave yesterday, it is really good. I thought the coconut a little tough, but would make it again. I was wondering about just putting in a little more nuts and not using the coconut, you think it would still get fudge like?................... Ann

Should be fine, I think - although the coconut soaked up a lot of the moisture - maybe need more protein powder too. You'd have to experiment.

I microwave the erythritol and butter (i use unsalted pb and butter so to this I add a pinch of salt and also 1 tsp maple extract and 1 tbs polyd) I microwave at 30 sec increments and stir til dissolved, then I microwave for about 3 min till bubbly and boiling. I ad the pb and splenda to that, then the coconut and toasted nuts if I am using) then add the protein last. Mine is more crumbly like fudge and I love it that way!! If I just melt the nutter and erythritol til dissolved it stays softer.

The unsweetened coconut flakes I can find here are very dry. I plump them up with a few TBLS Torani coconut syrup or a little boiling water.Let them sit for 15 minutes, pour off any remaining water or syrup.
