What to do with goat cheese

I bought a container of crumbled goat cheese the other day, and I thought it had a more pungent flavor sort of like feta. Turns out, its very mild and almost flavorless and I really don't like it by itself and probably wouldn't enjoy it on a salad like I do the feta.

So, what can I do with it? A friend of mine suggested squishing it into balls and frying it, but I wasn't sure what she meant really. I would love any suggestions to use this stuff up.

You should read lalala's weight loss journal. She eats goat cheese like everyday and has done 400 different things with it in her daily menus. You'll get ideas there.

I ordered a mesculine salad with goat cheese once.. and I didn't really care for it.. it tastes off to me..

i actually hate the taste of goat cheese. It's gamey and I just can't seem to love it anyway it's been serves. Good luck with it.

idk where you are as far as carbs go, but occasionally I'll eat goat cheese with pita and hummus with fresh tomato slices.....mmmm

Goat cheese does have a very gamey taste and a lot of people don't like it. I LOVE it, but I can't get my husband to eat it at all. The last dish I cooked with it was stuffed summer squash with loads of butter. I don't know what the carbs are in that, though because it was before I started counted them.

stuff tomatoes with it and put them under the broiler until the cheese starts to brown. I do small plum tomatoes, sliced lengthwise.

I think goat cheese is disgusting, though I LOVE a lot of other stinky cheeses.

I suspect it must include one of those flavors some people can taste and others cannot. There are a lot of foods that taste revolting to me, other people love. Oily Fish and roasted peppers and tomatoes, for example.

I'm not a huge fan of goat cheese myself, but a friend of mine always makes this roasted beets and walnut salad that has crumbled goat cheese on it for Thanksgiving every year. It is actually quite tasty.

I think a key point to address with goat cheese is to buy a good quality kind. I always get mine from a fresh source in the area and try to not get a pre-packaged kind from a grocery store because the taste tends to be off.

Needless to say, goat cheese is fabulous in salads. It makes a great dressing on roasted veggies when mixed with red wine vinegar, olive oil, avocado cubes and tossed really well. If the veggies are still warm, the goat cheese melts and coats the salad quite nicely.

It's also amazing in veggie omelets. I make them on a daily basis w/ onions, mushrooms, tomatoes, red bell pepper, fresh parsely and eggs. Once it's done cooking I top it and fill it with cuts of goat cheese and it melts and gets very creamy and just very very good.

There's lots of options, you just need to get creative and hopefully you'll find something you like

Thanks for the ideas - this was Alouette brand, nothing fancy. I mistakenly thought it was similar to feta otherwise I wouldn't have purchased it in the first place. I don't like it much so its probably the one and only time I will buy it. I hate to throw it out so I thought I would see if there were any good ideas out there. I'll give it a shot in an omelette. Ironicaly enough, right after I originally posted, I was watching Barefoot Contessa and she melted goat cheese and chives into scrambled eggs...maybe I will try that.

I bought The Healthy Low-Carb Cookbook a long time ago and haven't used it because it seems like every single recipe in it calls for goat cheese. It's out of print but looks self-published... maybe someone here wrote it?

I add finely crumbled goat cheese to my basic scrambled egg mix.....Mixed IN with the eggs, cream & seasonings....Cook it gently in the skillet, really stirring it constantly.....The cheese melts really nicely into the eggs without getting stringy. I think it's really delicious.

I buy a seasoned goat cheese that comes in a log shape - some of herbs and spices, some have black pepper, I think there may be others.

Anyway we LOVE it to make stuffed buffalo burgers! I take a pound of ground buffalo, divide into 4 equal portions, flatten each one into a thin patty; on 2 patties, I crumbled 1/2 ounce of the goat cheese (it's semisoft so it doesn't separate into easy crumbles,but I just kind of smoosh it out) and a tablespoon of crumbled bacon bits; top with the other 2 patties, seal the edges, reform into nice flat burgers; then I spray with EVOO cooking spray and sprinkle with either Cavender's Greek or taco seasoning, then grill 6 minutes each side. MAN it's good!

Cauliflower Goat Cheese Gratin - Bobby Flay's recipe
Ingredients

* 1 head cauliflower, cut into florets
* 2 cups heavy cream
* 1/2 pound Monterey Jack cheese, coarsely grated
* 2 cups grated Parmesan
* 6 ounces goat cheese, cut into small pieces
* Salt and freshly ground pepper

Directions

Preheat oven to 400 degrees F.

Layer the cauliflower, heavy cream, and the 3 cheeses in a medium casserole dish. Season with salt and pepper. Roast for 20 to 30 minutes or until the cauliflower is soft and the sauce has thickened slightly. Remove from the oven and let rest for 10 minutes before serving.

Cook's Note: Recipe can be doubled and made in a roasting pan.

This is REALLY good!

How about grilling or baking a chicken breast. Top it with goat cheese for the last few minutes of cooking.

Maybe even top that with some sort of lemon sauce. Mmmmmm.

I like to cook it into spinich, onions, peppers, ham and scramble with eggs. Love it in salads with walnuts, black olives and ham.

We had a dinner party last night and I made a salad with goat cheese. Everyone raved,and not a bit left.

Spinach/arugula mix
fresh thyme
red onion
dried cranberries
toasted pecans
crumbled chevre
dressing(olive oil,balsamic vinegar,a tsp.sugar,cranberry juice)

I love, love, love goat cheese! Spread on LC bread with roasted red peppers marinated in garlic and balsamic vinegar and topped with fresh basil...YUM. Also wonderful in salads as others have pointed out. Ina Garten has a recipe for fried goat cheese patties...oh my!

Good stuff! Pound a chicken breast thin, make a mixture of the goat cheese and dried tomatoes. Place the cheese mixture on the chicken breast, wrap up, and bake. I like to baste this with a butter/oregano/wine mixture.

Goat cheese is used a lot in Mexican dishes. Queso fresco. Maybe that's why, the dishes are so spicy they mask the taste of the cheese, but add that creamy, melted cheese texture to the dish.

We love goat cheese. Try putting it on top of zucchini and broiling it (either zucchini fritters or zucchini that has been grilled or roasted for a bit). Love it with some pesto on top and then shmeared on anything. Love love an omelet stuffed with goat cheese, spinach and bacon. Also, throw it on any fritatta before finishing it in the oven. Oh - it is great in so much more than salads.

This is delish! I actually goat cheese. I agree with everything VAmomof2 said and it is also awesome stuffed in zucchini blossoms or with roasted red pepper strips rolled in turkey. DH likes it smeared with pesto on crackers.

I've noticed that at least where I am, goat cheese is often made locally. That could be one reason to choose it.
