My Menu & shopping list for ten days
Here is my dinner menu and shopping list for the next ten days for a family of 5, the majority of the recipes you can find on Linda Sue's website because her website is like crack to me (Thank you Linda Sue!)
The tenth recipe, Chicken in Basil Cream, is one that I changed up from a popular recipe from allrecipes.com, by just replacing the breadcrumbs with Parmesan cheese, I will include it at the bottom and it is truly delightful, and then there is the uber popular one from recipezaar, bacon wrapped chicken, recipe also at bottom. ALL of the rest are Linda Sue's I shop in ten day blocks so that we have variety, but I stick to these solid ten and no one gets bored. I buy some things from Sams club, because it is cheaper for me. I think that these are all low budget recipes and still very rich and delicious! These are ALL tried and true recipes for our family, some ive been making for years. The shopping list is for all of the main dish ingredients and the simple sides. Sides are simply green beans or salad with ranch dressing around here, my family is all about the rich main dish 1)PIZZA CHICKEN 2)CHERI'S CREAMY SOUTHWESTERN TACO SOUP (serve with sliced Avacodo and cheddar cheese) 3)Bacon Wrapped Chicken (from recipezaar) (recipe below, I halve it) 4)QUICHE ITALIANO 5)DANA'S PARMESAN DEVILED CHICKEN (I make ten thighs instead of the 8 that the recipe calls for, so we each get two) 6)TUNA CASSEROLE III 7)MUSHROOM CHICKEN AND SAUSAGE CASSEROLE 8)SAUSAGE QUICHE 9)MUSTARD PORK CHOPS WITH CRISPY CABBAGE 10)Chicken In Basil Cream (fromallrecipes, recipe below) 20 chicken breasts (I buy 2 frozen bags from Sams, gives you about 4 left) 1 pkg pepperoni 2 lbs hamburger 1 pkg bacon 4 lbs ground pork sausage 10 chicken thighs 6 thick pork chops 2 cream cheese blocks 16 oz pepper jack cheese 3 lbs chedder shredded 8 oz cream cheese onion and chive blend 1 lb butter 4 cans green beens (as 2 nights side dish) 2 doz eggs 3 cups heavy cream ½ cup fresh grated parmesan 4 heads lettuce (as a side) bag of onions garlic 1 avacodo 1 lb mushrooms 2- 16oz bags frozen cauliflower 1 head of cabbage 1 bunch of celery ¼ cup fresh basil fresh broccoli ( as a side) 1 can pizza sauce 16 oz mozzerella 2 big bottle of ranch (as a side) 2 ten oz cans rotell 1 can tomato sauce italian seasonings large mayo large jar dry parmesan (the kind in a green jar) dijon mustard two six oz cans of tuna two can chicken broth onion powder emerils esence 4 oz jar sliced pimento peppers Chicken In Basil Cream 2 beaten eggs 1/2 cup dried parmesan 5 skinless, boneless chicken breasts 3 tablespoons butter 1/2 cup chicken broth 1 cup heavy whipping cream 1 (4 ounce) jar sliced pimento peppers, drained 1/2 cup fresh grated Parmesan cheese 1/4 cup chopped fresh basil 1/8 teaspoon ground black pepper Place egg and dried parmesan in separate, shallow bowls. In skillet, heat butter or margarine to medium heat. Dip chicken in egg, then coat with parmesan. Cook in butter or margarine, on both sides, until juices run clear (about 10 minutes). Remove and keep warm. Add broth to skillet. Bring to a boil over medium heat, and stir to loosen browned bits from pan. Stir in cream and pimentos; boil and stir for 1 minute. Reduce heat. Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated through. Pour mixture over chicken and serve! Bacon Wrapped Chicken (Oamc) Recipe #79944 I half this dish for my family, but you can make up the extra 6 and freeze for later 1¼ hours | 25 min prep SERVES 12 12 boneless skinless chicken breast halves 2 (8 ounce) cartons chive & onion cream cheese 2 tablespoons butter salt 12 slices bacon 1.Flatten chicken to 1/2" thickness. 2.Spread 3 tablespoons cream cheese over each chicken piece. 3.Dot with butter and sprinkle with salt; roll up. 4.Wrap each with a bacon strip. 5.Place, seam side down, in a greased pan. 6.Bake, uncovered, at 400F for 35-40 minutes or until juices run clear. 7.Broil 6 inches from the heat for 5 minutes or until bacon is crisp. 8.If you are making these ahead for future use, freeze these uncooked on a cookie sheet in your freezer. When solid, wrap and put in a ziplock bag or vacuum seal desired quantities. 9.To cook from frozen state, thaw before cooking and follow directions above. Katrin - Thanks for the two chicken recipes you posted. They sound great! I'm going to try both soon. Your entire menu looks so good! I was wondering if the recipe for Dana's Parmesean Devilled Chicken is one that you got from Linda Sue's site. I looked there, but couldn't find it. Maybe I just missed it... It sounds good - can you give me any help on where to find it? Thanks! Linda

Katrin, it was soooo delicious!!! I made it yesterday, but didn't have a chance to eat it because I had to go somewhere. The only thing different that I did was bake it in the oven. After I browned them, I put the chicken in a baking dish and added the sauce when it was done. My pieces were too big. I didn't pound them very much. Next time I will. This is going to be a keeper.

You buy Emeril's Essence? The recipe is simple and he's given it out many times and it's all over the net:
From the kitchen of Emeril Lagasse | Servings: Over 8 Difficulty: Easy Cook Time: 1-30 min This basic spice mixture is used in many of Emeril Lagasse's famous recipes. Mix some up and keep it on hand to add a little kick to any dish. Ingredients 2 1/2 teaspoon sweet paprika 2 teaspoon salt 2 teaspoon garlic powder 1 teaspoon black pepper 1 teaspoon onion powder 1 teaspoon Cayenne 1 teaspoon dried oregano 1 teaspoon dried thyme Cooking Directions Combine all ingredients in a small mixing bowl and blend well. Store in an airtight container in your spice cabinet for up to 3 months. |

Just trying to save people some money. There's a store near me that sells bulk herbs and spices so I can go in and buy just a certain amount. It's unbelieveable the difference in price. For instance, I'm asked to make dill dip for parties. In a normal grocery store you get 1/2 oz. jar for anywhere from 3.50 (on sale) to over $6.00. I can get it for $1.33 an oz., then I just put it in a jar I've saved.

Hungarian paprika is sweet paprika, unless it is marked "hot" or "smoked". My friend married a Hungarian, and she won't use anything but Hungarian paprika. Says it's the best.

Katrin - I made your Chicken in Basil Cream last night for dinner and it was so good! My husband wants me to make it for dinner once a week! Thank you very much for the recipe. I'm going to try the Bacon-Wrapped Chicken next. I always have trouble with rolled chicken recipes -- my stuffing usually oozes out before my chicken is cooked through. I'm not going to let that stop me, though -- the Bacon-Wrapped Chicken sounds to good not to try again! Linda

I just wanted to say thank you to the OP for the great recipes and grocery list. I followed it to a T on my last shopping trip and have made 3 of the recipes so far and all of them have been wonderful. This was so helpful to me in helping me maintain my low carb diet, especially being able to cook something the whole family would eat. This has made shopping and planning so much easier. I will probably switch out some recipes here and there so nobody gets bored but other than that this has been a real time saver for me.
The recipes I have made so far are: CHERI'S CREAMY SOUTHWESTERN TACO SOUP QUICHE ITALIANO Chicken In Basil Cream Next I will be trying the MUSTARD PORK CHOPS WITH CRISPY CABBAGE. I also wanted to say thank you to Linda Sue for posting all of her great recipes! I am so glad I found this website, thank you to all the wonderful talented people that have posted their creations for everyone to enjoy!! This has helped me tremendously with getting my blood sugars in check, last time I went to my Dr's. Appt. all my blood work came back good! |

This is fantastic, thank you. Love the shopping list and ten dinner ideas. I know someone who used their google calendar and sets up meals as events so that she has a calendar of meals set, no thinking required other than coordinating the shopping with upcoming meals.
