I got them at The Real Canadian Superstore, associated with Loblaws. If you go to the Yves site there is a store locator, however it doesn't list the soybeans as a choice but you may be able to find a store anyway based on your postal code. Good luck!

i bought coconut flour from netrition - you guys are so right! the cupcakes are light and fluffy, not dense like when i just ground coconut. definitely worth the investment!

OMG are these GOOD!!!!!!!!!! I did not have coconut flour. So, I used almond flour instead. It was all FAB!! I did have trouble getting the frosting to get to the right consistency, but that was my fault because I got distracted with my kids and did the ingredients in the wrong order. But since the sweetener I used is soo expensive, I just spooned soupy dollops on the cupcakes and they were devine!! The frosting tasted WONDERFUL even in a soupy form! LOL! Thank you sooo much for this awesome recipe. I also used some Torani Vanilla syrup in the cake batter as a substituion for one of the sweeteners and it turned out great. THANK YOU!!!!!!!!!!!!!!!!

I turned this into a layer cake and used the chocolate buttercream frosting- all I can say is WOW. My DH who despises all thing LC liked it, and my 4 year old just devoured a slice and said this is the BEST cake she ever had!!! Definitely a keeper, and even though it's bit higher in carbs than I usually do, the fiber kept my blood sugars stable! Yayyyyyyyyyyyyyyyyyyyyyyyyyyy and THANK YOU!!! Cake that actually tastes like cake! What a concept *L*...

I am new to these forums and found this site on Google after looking for LC cupcake recipes. I have made these already and they are on my stove cooling down. I will let them sit overnight before I try them. I am a little skeptical of the beans but everyone is saying they are good. I think I will try to make the chocolate cake next!

Just made these
I didn't let them stand or even cool--I had to eat one warm. With butter smeared on them they are pretty close to corn bread in taste and texture. This is a good thing even if I messed up the recipe! I didn't use canned beans, I had some small white beans I made and they weren't pureed totally smooth but seem to have stayed in little lumps (and I was lazy to keep blending). I didn't notice any beany taste but I don't with the black bean cake either.
I'll let the rest cool then frost with whipped cream stablized with a little sugar free instant pudding powder and see if I like them better as "corn bread" (which will become a staple for dinner), or as cup cakes (which as you know can be eaten anytime). |

Love them! Family loved them too! The only thing I changed was to add some buttery dough flavoring to the batter - we had some straight out of the oven too ... not a trace of beans or coconut flavor. My husband who doesn't like either, had no clue! I iced half with a mascarpone icing (YUM!) and left the other half plain to enjoy with cream and strawberries! Awesome recipe, thank you!

Just wanted to say I just made these again and used 6 TBS of Kevin's flour instead of the coconut flour and I think I now like the vanilla better than the chocolate version!
