Fluffy, Diner Style Pancakes (w/pics)
They taste like fluffy white flour pancakes! These oat and coconut flour based flapjacks are gluten-fre, and cheaper and lower in calories than those made with almond meal. This recipe makes a single serving. Great with butter and/or some sugar-free Maple Grove Farms syrup. Enjoy!

Serves 1. Ingredients: 1.5 tablespoons organic heavy cream OR 2 tablespoons coconut milk 1 large egg 3.5 tablespoons water (use only three if using coconut milk) 1/4 cup sifted oat flour (made from GF oats) 2 tablespoons sifted coconut flour 1/4 teaspoon aluminum-free baking powder 1/4 teaspoon sea salt 1/8 teaspoon pure stevia extract OR 2 tablespoons sugar-free sweetener Preparation: Heat a nonstick pan (yes, I use nonstick and refuse to apologize) to medium heat, or until a drop of water sizzles and "dances" around the skillet. You don't have to grease it. Whisk together egg and cream, and add dry ingredients. Whisk very well until there are no longer lumps. Pour or scrape batter on to skillet, and cook until bubbles appear on surface of pancake. Flip and cook other side for about 30 seconds. Serve with butter and sugar-free maple syrup, or a bit of honey, if desired. ~12g net carbs per serving |

Question: -Sometimes in your recipes you say "Stevia" or "Stevia Extract" is there a difference or do you always mean the extract? I just bought some stevia extract from Trader Joes but it tastes awful, I need to pick up the nunaturals brand that you buy. |

I just had a serving of these with my beef and egg scramble. Made them with 1/2 buckwheat flour (in place of half the oat flour), and a splash of vanilla extract. Needed to add another 1/2 tablespoon of water because buckwheat seems to soak it up more. So filling and decadent. Yummo! |

It was the pic that did me in. Was at the store and saw BRM oat flour so I bought it. I am making these for breakfast and will report in tomorrow. I swear, you make me want to buy a 10 megapixal camera and start taking pics of my food! I have to have pics!!

Cindy, I hope you like them! I fortunately ran out of oat flour, so I won't be eating them EVERY day. It's tempting, though! :D Invest in a 10 m.p. if you want to start blogging. And some good photo editing software! ;)

I made them this morning. I had never used coconut flour so I was excited. Let me start by saying the taste was wonderful and lightly coconut, which I love. I even licked the batter out of the bowl. They had a nice consistency and were surprisingly filling. My only question is to get the size and fluffiness you did, I would at least have to double the recipe. Well, ok, maybe not because when you look at the pic, they are roughly 1/2 the size of the plate. Mine were not as fluffy. Possibly my pan was too hot and if I had cooked them slower, they may have risen more.
Having said all of that, I will make them again. They taste was very good and the nice, healthy ingredients are always welcome. Love the coconut taste. Maybe a little coconut extract in with my pancake syrup. Now onward to make your vanilla "bean" cake with SF vanilla pudding! |

Yes, the coconut flour is BRM but I love the coconut taste. I did not sift the flours. I did however trip over something in my pantry that i have not used. Oat fiber 500 (I don't know what 500 means). No calories, just fiber in a very light, soft flour. 1/4 cup will add 9 carbs but also 9 grams of fiber and no calories. I got it from Netrition. I am going to remake these for lunch (!) and add 1/4 cup of oat fiber to see if I can get more volume without more calories. I used cream and instead of 3 T of water, I used 1T water and 2T Davinci's plain sweetener. Oh, I have coconut Davinci's. I'll use that for the "lunch" batch. I'll report back.

Oat FIBER 500 has 36 carbs per cup and 36 grams of fiber per cup so it is a wash. They state no calories per cup so it is solid fiber. I did add 1/3 of a cup of oat fiber 500 (Netrition for $3.29 for 1 pound which is a number of cups) and more water (I didn't measure it) till I had what I thought was a batter. I did get 1 more pancake out of the batch but I used too much water as they were "wet". I need to make a thicker batter that you have to kinda push around, not pour on the griddle. I am going to make another batch right now and this time measure the water.

Ok, here's my advice. LEAVE LAUREN'S RECIPE ALONE!! haha It is perfect as is. I did not have luck with the oat fiber, although it is a good product, just not in this application.

Kim, I made 3 batches today of her pancakes, 2 with the oat fiber and i just couldn't get the oat fiber right. The best ones were the ones that were made as written. But Lauren stated that she tripled the batch for the pics so that was probably my volume problems.

Cindy- I made 1 batch and it came out 2 two smallish panackes. They were fluffy and were wonderful. Probably could have eaten another batch, but, tried to stay in the carb range Lauren posted.

I tried oat fiber some time back and found it no use, alas--it has nearly no flavor. (And oat bran has about the same net carbs as oats, oddly enough.)
