I made this with buckwheat flour (was out of oats/flour) and they were very yummy! They were not as fluffy as the picture (used a different flour though, so I didn't expect them to be the same as pictured), but they were fantastic with local ripe strawberries and whipped cream! I can't wait to make these with the oat flour next!

Lauren - All I can say is Yummmmmeeee! I finally tried these pancakes this morning - they are without a doubt the best I've had since I've been low-carbing - delish! They are very filling, I had a hard time, but I ate the whole thing!
Thank you for the recipe.![]() I do have one question though, have you or anyone tried making a big batch and freezing them? I have made several lc pancake recipes and frozen them in meal-size portions but they always seem flat and can easily get tough when reheated in the micro.. TIA

Lauren, these look and sound awesome!
If someone has a chance (and an extra pancake available) would you try to freeze and let us know the results? I tend to be in too much of a hurry to cook in the mornings, but can easily fit in a microwave session! |

Good Morning Everyone -- he is my edited version of the original recipe. They were FABULOUS!
Healthy Low Carb Pancakes Makes 2 medium flapjacks. Serves 1. Ingredients: 3.5 tablespoons organic heavy cream OR 2 tablespoons coconut milk 1 large egg 3.5 tablespoons water (use only three if using coconut milk) 1/4 cup Carbolose flour (sold online) 2 tablespoons sifted coconut flour 1/4 teaspoon aluminum-free baking powder 1/4 teaspoon sea salt 2 packets NuNaturals pure stevia extract OR 2 tablespoons sugar-free sweetener 1/4 tsp vanilla extract I cooked them in VCO and they did fry up fast. Delish!
